Visitors will be able to enjoy a series of classic cocktails with a floral twist, specially curated by seasoned mixologist and acclaimed bartender, Anton Gornev. Each cocktail is meticulously crafted and presented in a pre-to-post-dinner sequence, aiming to complement the meal and whet appetites.
Following closely to the floral theme, The Mirabilis Bar’s creations are each crafted with a unique character. Incorporating a twist into the classic Mexican cocktail, the Chamomile Paloma (S$22) evokes a strong personality combining the bold profile of tequila with a delicate hint of chamomile for a refreshing twist and a mellow, honey-like sweetness, all meticulously infused in-house.
Signatures like the Hibiscus & Rose Sour (S$22) and Bergamot & Elderflower Negroni (S$22) bring out the tropical vibes of our sunny shores through their zesty, citrusy profiles. Smooth house-infused hibiscus rum meets the zesty lime and delicate rose syrup in the Hibiscus & Rose Sour. This refreshing blend harmonises floral notes with a twist, perfect as a pre-dinner aperitif.
The earl grey gin in the Bergamot & Elderflower Negroni provides a distinctive tea base from the bitter orange liqueur, complemented by the subtle sweetness of elderflower. Boasting a refreshed menu designed to appeal to both locals and tourists alike, Dusk @ Mount Faber Peak offers modern European cuisine with Asian influences that perfectly complement the scenic backdrop of the setting sun over Mount Faber.
The new and exquisite Jumbo River Prawn Thermidor (S$32) debuts as Dusk’s interpretation to the classic European Lobster Thermidor. Grilled over Binchotan charcoal and drizzled with a tangy yet mildly-spicy peanut Béchamel sauce, the sweet and juicy Asian river prawns are transformed into a culinary masterpiece, offering a harmonious blend of smoky flavours and creamy textures that elevates the dining experience to new heights of satisfaction.
All-time favourites will continue to delight guests, ensuring that the flavours they have come to love, remain a part of their dining experience. Among these are the popular Dusk Signature Prawn Capellini (S$28), featuring succulent tiger prawns and sautéed angel hair pasta infused with the harmonious flavours of Japanese kombu and prawn-infused oil, and the rich and savoury French-Cut Rack of Lamb (S$88) that features a charcoal-grilled Australian lamb rack paired with red wine sauce, vine tomato, and garlic confit, charred over the Robata charcoal grill.
The dessert selection has been reimagined with a unique, contemporary twist. The Vanilla ‘Feng Li’ Crumble (Pineapple) (S$16) combines East-meets-West flavours, featuring delightful vanilla custard topped with pineapple gelee and coconut sorbet, with a hazelnut crumble base, offering a refreshing finish to a hearty meal.
With its recent revamp, Dusk introduces a new Private Dining Room, providing guests with an intimate space to host private gatherings. It is also equipped with audio-visual fittings, accommodating up to 12 diners. Guests can select between a 3-course, 4-course, or 6-course meal starting from S$78++, featuring popular dishes like Fjord Trout Confit or Mushroom Cappuccino Soup for an appetiser, and main courses like charcoal Grilled Australian Hanger Steak or Boston Lobster.
