Hung’s Delicacies, a Michelin-starred restaurant for five consecutive years, has recently announced the relocation of its Kwun Tong branch to a new 5,000-square-foot space in the heart of Causeway Bay, Tower 535. The Causeway Bay outlet following the success of its original North Point location and the Kwun Tong branch.
The new Causeway Bay location will not only serve the signature marinated dishes that have earned Hung’s Delicacies its loyal following, but also introducing a range of new wok-fried Cantonese specialties and delicate small plates. To celebrate the opening, the restaurant is offering a complimentary appetizer of Tossed Crispy Shredded Pig Ear (valued at HK$88) for every 4-person dining party. This promotional offer is valid from today until September 30, 2024, available all-day on a first-come, first-served basis.
Founder Master Hung, with over 40 years of culinary experience, has managed various airport restaurants and has also served at Yung Kee and numerous hotels and F&B groups in Hong Kong. In the early 2000s, Master Hung and his wife opened the first Hung’s Delicacies in North Point. Leveraging years of experience and unique culinary skills, along with an unwavering commitment to food quality, Master Hung quickly established it as a popular Chiuchow restaurant in the area and beyond. Its branch at the Hong Kong International Airport Terminal 2, which had been recognized with multiple international awards. also allowed international travellers to savour his signature marinated dishes.
Hung’s Delicacies – Introducing The Refined Chiuchow Cuisine to the Younger Generation
Hung’s Delicacies is set to revolutionize Chiuchow cuisine. The new 5,000-square-foot establishment in the heart of Causeway Bay can accommodate up to 100 diners and boasts three private dining rooms that can each host up to 16 guests, making it an ideal venue for gatherings, business meetings and private functions. The space is designed to provide a comfortable dining environment for patrons.
Despite its prime location, Hung’s Delicacies offers guests a chance to savour the signature Chiuchow specialties and refined Cantonese dishes. The centrally located food display features a tempting array of Marinated Goose, Whole Squid, Garlic Chicken, and various marinated delicacies, whetting the appetite of diners. The clean and well-lit semi-open braising station ensures food safety and hygiene.
The restaurant continues to serve its popular signature dishes, including Marinated Goose Slices (regular order HK$288), Marinated Goose Liver (half portion HK$228), and Marinated Whole Goose (half – HK$468). In addition, the establishment has introduced new culinary creations. Master Hung sources his goose from trusted farms to ensure a steady supply and consistent quality. The braising sauce, refined over the years, uses fewer herbs and salt, and is less oily, allowing the inherent flavors of the ingredients to shine through. As Master Hung explains, the secret to perfectly marinated goose lies in the time spent for the braising process, which varies with the weather, as well as the knife skills required to slice the meat against the grain to achieve the optimal texture.
One of the new signature dishes is the Chiuchow-style Cold Fourfinger Threadfin (HK$388), which sees the fish cut into neat cubes and presented in a refreshing new way, unlike the traditional Chiuchow plating style. The fish is firm, succulent, and lightly seasoned to highlight its natural sweetness. The signature Pan Fried Semi-dried Fourfinger Threadfin (HK$338) is one of the many innovative creations Master Hung has curated over the years, where the fish is marinated overnight before being pan-fried, making it crispy on the outside and tender on the inside. Steamed Fourfinger Threadfin in Aged Huadiao Wine (HK$338) is infused with the fragrant aroma of the Chinese Huadiao wine.
Another new creation – Rainbow Fried Rice (HK$148) is made with natural ingredients for its vibrant colours – the pink fried rice is made with dragon fruit juice, complemented by the traditional egg fried rice and scallions. Selected seafood are added to the mix, resulting in each grain of rice being perfectly distinct. The shrimp and squid are pounded to an appetizing chewy texture, then wrapped in sweet and juicy lychee flesh, encased in a crispy red rice to create the Crispy Shrimp Balls in Lychee Shape (HK$238) – presented elegantly on a custom-made tiered stand, resembling fresh lychees hanging on a tree. This is one of Master Hung’s new signature dishes. Lastly, Vegetarian Goose (Chef Originated Bean Curd Sheet) (HK$98) is another great dish selection which is cooked in homemade sauce, infusing each piece with unique flavor while retaining the natural fragrance of the soybeans. With a tender and smooth texture, distinct layers, and complex preparation, this is a thoughtfully crafted dish in which the richness and multi-layered presentation make it a distinct culinary masterpiece.
From Customers to Friends – Where Lifelong Relationships are Built
Throughout the years countless friendships have been built between Master Hung and his loyal customers. In the early days in North Point, the restaurant would temporarily close its dining area during Lunar New Year to focus on takeaway orders of the Braised Assorted Vegetables with Red Fermented Bean Curd and various marinated dishes. Some customers would even follow Master Hung from North Point to Kwun Tong and now to Causeway Bay, just to savour the heart-warming Braised Assorted Vegetables with Red Fermented Bean Curd (HK$138), which Hung’s Delicacies has become famous for.
The 3-meter-long scroll being the centrepiece of the restaurant, as well as the “Goose” signage on Master Hung’s business cards and menus, were created by Mr. Chan, a regular of Hung’s Delicacies since the early days who is an ardent calligrapher. He did not hesitate to send his blessings to Master Hung for the shop relocation even after immigrating to the U.S.
Master Hung hopes that for the new location, in addition to providing a more comfortable, spacious and elevated dining environment, could also make Chiuchow cuisine more youthful with the refined and
visually appealing dishes. He is grateful for the support from long-standing customers and welcomes younger generations to enjoy high-quality Chinese dishes.
