Starting June 2017, L’Assaggio Restaurant menu bears the signature of Ugo Alciati, Michelin-starred Chef at the helm of the historic Guido Ristorante in Serralunga d’Alba, in northern Italy, and Italian Truffle Ambassador throughout the world.
Praised for his creative “clarity” and essential approach to enhancing ingredients, Ugo Alciati comes from a celebrated family of Italian culinary masters.
Having spent many years with an in-depth training with Ugo Alciati, Chef Arandjelovic is now back to the Castille to masterfully execute the culinary history of this Italian landmark.
The new menu that the Chef brings to L’Assaggio, conceived and signed by Chef Ugo Alciati, is a homage to the flavors of Piedmontese terroir. Every bite carries guests on a journey through the history and the heart of this region, a collection of traditional culinary culture with characterful nuances, raised to the highest level thanks to the chef’s extraordinary talent in enhancing traditional recipes and high-quality seasonal ingredients.
Among the signature dishes, Vitello Tonnato, one of Ugo Alciati’s most renowned recipes. Pasta dishes include Agnolotti di Mamma Lidia which arises from Ugo Alciati’s mother’s recipe, Lidia Alciati: one of the great Italian offerings described in cooking books. This dish is inspired by another symbol of Piedmont, also present at L’Assaggio: Agnolotti del Plin, served on a napkin just like the tradition requires.
Together with Chef Sacha, L’Assaggio welcomes a new Sous Chef, too, Marco Terenghi, who boasts a similar education to Sasha Arandjelovic, having been part of Chef Ugo Alciati’s brigade at Guido restaurant.
Set in a sophisticated Parisian ambience characterised by wooden furniture and embellished with gold accents and vintage prints, L’Assaggio Restaurant overlooks a bright patio, a private and elegant courtyard enriched by a monumental fountain that recalls Mediterranean landscapes.
The restaurant offer an intimate and sophisticated atmosphere in which guests can indulge in a great food offering, surrounded by discreet luxury and in an intimate space.
L’Assaggio restaurant is open at lunch from 12.30 pm to 02.30 pm, and at dinner from 07.30 pm to 10.30 pm. Closed on Sunday and Monday.
