GUGA, the new restaurant at Nômade Temple Madrid, has officially opened its doors, bringing a fresh dining concept and new social hub to the heart of the Spanish capital. Inspired by Italian culinary traditions and the character of Argentine and Uruguayan fire cooking, the restaurant is built around a simple idea: to reclaim the pleasure of long-lasting meals and to turn every table gathering into a celebration.

The story began one evening with a meeting between owner and host Guga Pereyra and two friends around a dinner table. From that night, the desire was born to bring this way of gathering to Madrid; eating well and extending conversations late into the evening, creating a restaurant where exceptional produce, fire cooking and genuine hospitality took centre stage.

The Most Anticipated Table of the Season

The menu takes its cues from Italy, offering a recognisable and refined approach with a focus on quality ingredients. Signature dishes including Vitello Tonnato, Carpaccio, Burrata alla Mediterranea, Aubergine Parmigiana and a carefully curated selection of fresh pastas sit alongside the restaurant’s other defining feature: the grill.

Bringing together Argentine and Uruguayan influences, the grill introduces cuts including short rib, dry-aged flank steak, rib-eye, sirloin and fillet, alongside fish and seafood cooked over open flames.

Behind GUGA is also a distinctive approach to hospitality: warm, generous, slightly eccentric and effortlessly elegant. This profile seeps into everything from the food and service to the pace of the experience, making every table a unique place to gather.

A Wine List Spanning Spain, Argentina and Italy

The wine cellar brings forward some of the leading wine-producing regions of Spain, Argentina and Italy, with labels from Madrid, Rioja, Ribera del Duero, Mendoza, the Uco Valley, Piedmont, Veneto and Sicily, complemented by a carefully selected collection of international wines.

Meanwhile, the cocktail menu embraces timeless classics and complements an experience that does not necessarily have to end when dinner is finished.

At GUGA, evenings begin around the table before taking on a rhythm of their own. An uncorked bottle, dishes shared in the centre, live music and conversation that stretches long into the night, with a final drink soon turning into another.

A New Great Table in Madrid

The space reflects GUGA’s character through interiors inspired by grand Italian homes, featuring white ceramics, elegant glassware, silver and pewter details, wood and other natural materials. The service follows the same philosophy: attentive, precise and welcoming, without interrupting the flow of the table.

With GUGA, Nômade Temple Madrid adds a new chapter to its world of hospitality, gastronomy, music, wellbeing and culture as a restaurant worth returning to time and time again.
