25hours Hotel The Olympia has appointed Peter Roach as Commercial Director, reinforcing its leadership team as the hotel continues to cement its position as one of Sydney’s most distinctive lifestyle destinations. Since opening in October 2025, 25hours has established itself as a neighbourhood anchor at the intersection of Paddington, Surry Hills and Darlinghurst, where design, dining, culture and community come together under one roof.

Reporting to General Manager Jake Guilfoyle, Peter will lead the hotel’s commercial strategy, guest engagement, strategic partnerships and market positioning, driving the next phase of growth across accommodation, food and beverage, events and the hotel’s wider brand presence.

Peter brings more than a decade of hospitality experience spanning operations, sales, marketing and events. Beginning his career in housekeeping, he has built an impressive track record across the industry, including several years with Accor, where he progressed through a number of commercial leadership roles. Most recently, Peter served as Director of Sales & Marketing at Caption by Hyatt Central Sydney, where he played an integral role in the hotel’s successful opening and helped establish its position as one of Sydney’s leading lifestyle hotel destinations.

Jake Guilfoyle, General Manager of 25hours Hotel The Olympia, said: “The culture we’ve built at 25hours has always been about bringing together great people with fresh ideas, and Peter is exactly that. He brings a wealth of commercial experience, but just as importantly he understands that the best hotels are driven by personality, creativity and connection. I’m excited to see the impact he’ll have as we continue building on what we’ve created over the past nine months.”

Peter Roach added: “The Olympia has found its footing at the blurry, brilliant edges of Paddington, Surry Hills and Darlinghurst, a neighbourhood with a deep creative legacy and a diaspora that makes it one of the most interesting corners of Sydney. The storytelling we’ve built around the Olympia Theatre’s history gives us something genuinely ours, and our culinary precinct is where that comes alive. Having four distinct venues under one roof is rare for a hotel of our size, and it’s made us a hub for locals, key partners and guests alike. That combination is what drew me to this role.

What excites me most now is our agility, and what we do with it next. We’re a global lifestyle brand with the instincts of an independent, able to read the neighbourhood, move quickly, and keep giving people a reason to come back.”

Since opening in October 2025, 25hours Hotel The Olympia has become one of Sydney’s most distinctive lifestyle destinations, celebrating the heritage of the historic Olympia Theatre while embracing the creativity and culture of the surrounding neighbourhoods. Located at 1 Oxford Street, where Paddington, Surry Hills, Darlinghurst, Kings Cross and Moore Park converge, the hotel is home to four destination dining venues: The Palomar, The Mulwray, Jacob the Angel and rooftop bar Monica.
