Raffles Bali welcomes A, the two Michelin-starred restaurant from Taipei, for the next edition of Rumari & Friends, a dining series that brings together chefs with shared values and distinct culinary perspectives. Taking place on 21 and 22 August 2026, the collaboration sees Rumari’s Chef Gaetan Biesuz joined by Chef Alain Huang for two evenings shaped by craftsmanship, seasonality and a thoughtful exchange of ideas.
At Rumari, every menu begins with Indonesia. Guided by an 80/20 sourcing philosophy, the restaurant celebrates the country’s rich biodiversity by working closely with local farmers, fishermen and artisan producers. Through its Progressive Indonesian Cuisine, Rumari reinterprets Indonesia’s culinary heritage with contemporary expression, creating dishes that honour their origins while embracing creativity and the seasons.
For the second edition of Rumari & Friends in 2026, Chef Alain Huang brings the philosophy behind A, where he describes his culinary approach as CONTINUMIC—a term he coined by combining Continue and Dynamic. It reflects his belief that cuisine is in a constant state of evolution, shaped by seasons, ingredients and experiences while remaining deeply connected to its foundations.
While their culinary journeys began in different places, both chefs share a common approach: allowing ingredients to lead the conversation. Together, they have created a menu that reflects the character of Indonesia while drawing inspiration from contemporary French cuisine, resulting in dishes that are both expressive and deeply rooted in their origins.
Guests may choose between two distinct dining experiences. At Rumari, the collaboration is presented as a multi-course tasting menu in the restaurant’s elegant dining room. For a more intimate setting, Rumari Counter offers a limited-seat chef’s table experience, where guests are invited to enjoy the menu in close proximity to the chefs and their craft.
Since its introduction, Rumari & Friends has welcomed acclaimed chefs from across Asia and beyond, creating opportunities to celebrate different culinary philosophies while remaining true to Rumari’s own identity. Each collaboration is thoughtfully curated, ensuring every edition offers a new perspective while continuing the restaurant’s journey of discovery.
