Spread the love

From 1 June to 31 August 2026, SKAI invites you to a charming new high tea experience inspired by Disney’s Winnie the Pooh and friends. Set against panoramic views of Singapore’s skyline, the experience invites guests into the gentle story of Pooh and his adventures in the Hundred Acre Wood, where familiar characters are reimagined through refined flavours and clever culinary craft. Led by newly appointed Executive Chef Enver Can Gumus and Executive Pastry Chef Yong Ming Choong, the menu balances storytelling and imagination with precision, translating beloved moments into a series of playful savouries and intricately detailed sweets that evoke a sense of nostalgia.

Reimagining Winnie the Pooh and Friends

William J. Haandrikman, Managing Director at Fairmont Singapore and Swissôtel The Stamford, shares, “Winnie the Pooh and friends have a magical way of bringing people together through the simplest moments. At SKAI, we wanted to capture that spirit in a way that feels nostalgic yet beautifully elevated, translating these much-loved characters into a high tea experience that’s playful, comforting and crafted with care. After all, life was made for good friends and great adventures, and this collaboration is our way of inviting guests to slow down, share something sweet, and escape to the Hundred Acre Wood for an afternoon.”

A High Tea Menu of Character-Inspired Sweets and Savouries

The pastry selection unfolds with a sense of quiet wonder, each creation capturing the charm of a character through flavour, texture and form. Blushing Strawberry Delight reflects Piglet’s gentle spirit through layers of Sengana strawberry cream, basil coulis and almond genoa sponge, finished with delicate strawberry chocolate detail. This is followed by Golden Hunny Lemon Choux, a technically intricate creation inspired by Winnie the Pooh, shaped like a floating balloon and filled with forest honey lemon and mascarpone Chantilly. Because there’s no such thing as too much hunny!

The adventure continues with Gentle Meadow Cream Tart, where vanilla cream cheese, orange compote and matcha sponge come together with a subtle crackle of popping candy, evoking the calm beauty of the meadow. Nectar Garden celebrates Pooh’s enduring love for ‘hunny’, pairing Manuka honey-poached white peach with house-made granola and yoghurt gelato, finished with a delicate white chocolate bee. The experience is completed tableside, where a curated trio of single-origin Indonesian honeys is presented in charming honey pots. Guests are invited to explore Black Forest Honey from Flores, harvested from wild Apis dorsata bees in eucalyptus forests, offering a rich, unfiltered texture; Cotton Blossom Honey from Central Java, produced by European honey bees with a mild, gently tangy profile; and Dark Acacia Honey from Java’s peatland forests, with deeper notes of chocolate, fruit and a subtle bittersweet finish. Each honey offers a distinct expression to complement the dish.

Marking one of his first thematic showcases at SKAI, Chef Enver approaches the savoury selection with a delightful balance of flavour, colour and storytelling, translating each character into a refined bite. Garden Harvest Basket draws from Rabbit’s love for fresh produce, featuring carrot hummus set within a delicate tart shell and topped with a savoury crumble that evokes the texture of garden soil.

This is followed by Picnic Blanket Roll, where soft pink focaccia is layered with truffle beetroot cream, Parma Ham and olive oil caviar, bringing together both colour and richness in a single bite. The narrative continues with Herb Garden, a playful composition of savoury labneh and green pea dip paired with a crisp crouton for dipping, capturing Tigger’s spirited energy through fresh, vibrant flavours.

A Little Blue Puff reflects Eeyore through its gentle tones, combining char siu shrimp with ponzu mayonnaise and Oscietra caviar, finished with an edible flower for a subtle, elegant touch. Concluding the selection, Hunny Butter Picnic Bun pays a final homage to Winnie the Pooh, featuring a fluffy corn bun infused with honey, filled with fig jam and mascarpone, and topped with honey jelly, gold flakes and honeycomb, bringing the menu back to Pooh’s insatiable love of honey.

The experience is completed with warm house-made scones served with Devonshire cream.

Two handcrafted non-alcoholic cocktails are designed to pair with the experience. Sweet Snuggle Fizz blends raspberry, lemon, grenadine, cream and soda into a soft, uplifting drink inspired by Piglet, while A Smackerel of Hunny combines chamomile tea, honey, ginger ale and apple cider vinegar foam into a warm, floral and lightly sparkling sip, themed after Pooh’s signature warmth and whimsy.
