Elysia Wellness Retreat is entering a new phase of growth, expanding its signature dining experience at Fusion Restaurant beyond retreat and spa stays to welcome dining guests from 18 May 2026.
Previously exclusive to wellness package retreat guests, Fusion Restaurant will now be open for lunch bookings to all Elysia guests, the local community and visitors to the Hunter Valley the first time – marking a strategic shift for Elysia as it broadens its appeal and unlocks new opportunities across the wellness, spa and regional tourism markets.
The move forms part of a broader evolution of the guest offering at Elysia, which now includes shorter, more flexible packages and bed and breakfast stays. It reflects a wider shift across the travel sector, as properties diversify their experiences to meet growing demand for more flexible, wellness-led experiences and day-guest access – a market forecast to grow from $46B (2025) to $57B by 2030.*
Set within the Hunter Valley, the decision to make Fusion more accessible to a wider audience positions Elysia competitively amongst the region’s premium food and wine offerings, while maintaining its core wellness credentials.

Developed in consultation with Elysia’s naturopath Gina King, Fusion’s menu remains grounded in the retreat’s philosophy of balanced, nourishing cuisine, with a focus on seasonal and wholefood ingredients. The menus feature natural sugars only, protein-inclusive options, and showcase garden-fresh flavours that reflect Elysia’s commitment to health without compromise.
“At Elysia Wellness Retreat, food is more than sustenance – it’s an integral part of the wellness journey,” said General Manager, Kim Weller. “Our approach focuses on nourishment, not restriction, empowering guests to make choices that support lasting wellbeing. We’re excited to share our new menu with our guests and the wider local community for the first time.
“This is part of an important evolution for Elysia as we continue to grow and adapt to the need for more flexible and accessible wellness experiences. Opening Fusion to the dining guests allows us to extend the Elysia experience beyond stays and spa days, creating a more accessible entry point for new audiences while strengthening our position within the region as a leading wellness destination.”
Complementing the food menu is a new curated beverage list featuring both alcoholic and non-alcoholic options for guests to enjoy, with all wines sourced from local Hunter Valley wineries to further reinforce the destination’s appeal.
The opening also enhances Elysia’s value proposition for trade partners, creating new opportunities to package the retreat as part of day itineraries, wellness escapes and food-led experiences.
From 18 May, Fusion will open to dining guests for lunch from 12pm to 3pm. In keeping with the retreat’s adults-only environment, diners under the age of 18 are not permitted.
