Ten years ago, the Nilands opened a small fish eatery on Oxford Street in Paddington with a simple idea: to celebrate the extraordinary diversity and quality of Australian fish and produce. What followed has taken them – and Australian seafood – to the world stage.
To mark the occasion, they are hosting a series of exclusive dinners, each one a genuine collaboration with a chef who has shaped their journey. For many of the visiting chefs, it will be their first time cooking in Sydney – their first encounter with the extraordinary breadth of Australian fish, seafood and produce. Together with Josh, each chef will create a very special menu for one night only.
“This series of dinners is our way of celebrating and thanking the exceptionally talented team at Saint Peter that contributes tirelessly to making it the special place that it is. We want to provide them the opportunity to stand alongside the chefs we all admire most – to cook, learn and be inspired by them. We also want to open this opportunity up to the wider hospitality profession; we have two complimentary tickets set aside for each dinner. These will be given to deserving hospitality professionals through a nomination process we will arrange through our social media. We are all very excited to cook with these incredible chefs. The series opens next month on the 15th of April with Saint Peter x Rasmus Munk. Ranked #5 on the World’s 50 Best Restaurants and named Best Chef in the World at the 2024 Best Chef Awards, Rasmus Munk is one of the most boundary-defying culinary minds working today. The pair first cooked together at CONVERGENCE in Copenhagen earlier this year, and this dinner marks their first collaboration on Australian soil.
