Chef Aiden Tibbetts of Denver’s acclaimed restaurant Wildflower has been awarded the 2025 Michelin Young Chef Award in the newly released 2025 MICHELIN Guide Colorado. The honor celebrates Tibbetts’ creativity, precision, and potential as one of the region’s most promising culinary voices. Wildflower was also named a MICHELIN Recommended restaurant in this year’s guide.

A Denver native, Tibbetts is known for his deeply seasonal, ingredient-driven cooking that blends the neighborhood’s historic Italian and Mexican roots with modern techniques and thoughtful sourcing that reflects the ethos of Colorado’s contemporary food scene. His culinary philosophy centers on high-quality, locally sourced ingredients, a plant-forward sensibility, and a refined yet approachable style that has securely cemented him as a neighborhood favorite.

“We are truly honored to be recognized by the MICHELIN Guide,” said Tibbetts. “The Young Chef Award is something that I could only dream about in the early days of my career, and I’m humbled to receive it. This recognition is a reflection of our entire team, purveyors, and the incredible guests who let us share our passion with them every day.”

Wildflower, located within the Gravity Haus Denver hotel, features a menu that evolves with the seasons and highlights the richness of Colorado’s food landscape. The restaurant’s bar program mirrors the kitchen’s ethos with expertly crafted libations highlighting locally sourced botanicals. Partnering with producers throughout Colorado, Wildflower offers a variety of local meads, natural wines, beers, cocktails, and non-alcoholic elixirs that pair incredibly with their dishes and share a connection to the land.

“From day one, our vision for Wildflower was to create a dining experience that reflects the spirit of Colorado, rooted in community, defined by craftsmanship, and elevated by hospitality. Chef Tibbetts has brought that vision to life in a remarkable way. We could not be prouder of him and the entire team,” said John Reilly, owner of Wildflower and Gravity Haus Denver.

“Chef Tibbetts’ creativity and attention to detail embody what makes Wildflower and Gravity Haus Denver – truly exceptional,” said Jim Deters, CEO of Gravity Haus. “This award is a well-deserved recognition of his talent and leadership. We’re thrilled to continue our partnership as we assume operations of the property and build on the remarkable experiences Wildflower brings to our community.”

The MICHELIN Young Chef Award recognizes rising stars who demonstrate exceptional culinary skill and the potential to influence the future of gastronomy in their region. It is awarded alongside the Guide’s star ratings and Recommended designations.
