As DARK MOFO 2025 takes over Hobart this month, LARK Distilling Co. invites festival-goers to step into the shadows with a bold and immersive line-up of whisky-infused experiences spanning two of the capital’s most atmospheric venues: LARK Cellar Door and The Still.
Designed as sultry, after-dark sanctuaries, both spaces will host walk-in events from Thursday 12 June to Sunday 15 June, blending fire, flavour, music and performance – all with Tasmania’s brooding DARK LARK 2025 single malt at the centre.
LARK CELLAR DOOR: THE DARK LARK SOLSTICE BAR
Located on Hobart’s waterfront, LARK Cellar Door is steeped in character and legacy – an evocative setting for this year’s DARK LARK Solstice Bar. Running each night from 5pm, the Solstice Bar is where open fires, moody lighting and whisky rituals come together in an unforgettable winter atmosphere.
On Friday 13 June from 7pm, the Solstice Bar will host a special Meet the Makers session, where LARK’s blending team will gather around open fires to share stories behind the new DARK LARK 2025 release. Guests are invited to sip hot buttered whisky, indulge in luxe grilled-cheese sandwiches by Bay of Fires cheeses and connect with the creators behind the distinctive single malt.
THE STILL: COCKTAILS, SMALL PLATES AND LATE-NIGHT PERFORMANCES
Just a short stroll from the waterfront, The Still is LARK’s contemporary whisky bar and boutique, where curated cocktails, elevated plates and intimate performances take centre stage.
Season & Fire small plates
Bringing fire to the table, local culinary duo Season & Fire will deliver a curated small plates menu from Thursday 12 June through Sunday 15 June, 5pm to 10pm each night. Designed to match the whisky-forward drinks list and the intimate energy of the Listening Lounge, the menu will showcase hyperlocal ingredients and winter flavours with a wood-fired twist.
DARK LARK cocktail menu
At the heart of the experience is DARK LARK – LARK’s brooding, expressive single malt. The 2025 release will debut during the festival and star in a limited-edition cocktail menu crafted exclusively for The Still. From smoked garnishes to spiced and stirred signatures, the drinks list is designed to elevate the whisky’s rich complexity while drawing guests deeper into the spirit of the solstice.
The Listening Lounge
From Thursday 12 June to Sunday 15 June, The Still’s whisky lounge will transform into the Listening Lounge, a moody, late-night hideaway programmed in partnership with local tastemakers Sounds Good. From 5pm to 1am, a rotating line-up of Tasmanian DJs and artists will fill the space with deep rhythms, ambient sets and textural sounds designed to complement the richness of the Dark Lark offering.
Prohibition Hour
As night deepens, Prohibition Hour will take centre stage on Friday 13 June and Saturday 14 June. Delivered in partnership with The Movement Arts & Entertainment, these late-night burlesque performances will introduce interstate talent into the venue from 10.30pm, adding an element of seductive theatre to the Listening Lounge’s sonic atmosphere. Expect powerful, glamorous and provocative acts to bring an edge of decadence to Hobart’s winter weekend.
