Market City - 25 Spices Hunan - LogoIn the culinary heart of Sydney’s Haymarket, a new fire has been lit—and it burns with 25 spices.

Market City, already a mecca for the hungry and the curious, has welcomed the bold, spirited newcomer: 25 Spices, a striking ode to Hunan cuisine that brings the province’s fierce heat, smoky depth, and sour tang to the Australian palate in style.

This isn’t just another trendy restaurant launch with an Instagrammable fit-out and a soulless menu. This is personal. Very personal.

Chef and founder Vincent Wei is a man on a mission, seasoned with nostalgia, tradition, and a refusal to water down his roots. After arriving in Australia and realising that Hunan cuisine was nowhere to be found—no smoky pork, no chilli-soaked beef, not even a sniff of sour pickled greens—he built it himself. First came a tiny takeaway in 2016, slinging marinated meats with all the bravado of back-alley Hunan street food. Then, the cult favourite Pappa’s Stew in Newtown. Now? His pièce de résistance: 25 Spices.

“Hunan food isn’t about numbing heat or sugary sauces,” Wei declares, sleeves rolled, eyes blazing. “It’s about soul. Fire. Depth. This place is my dream – everything I remember from home, brought to life in Sydney.”

And what a life it is. The menu doesn’t tiptoe around timid tastebuds. It gallops headfirst into the furnace. Hunan-style chilli eggplant comes crowned with slices of century egg—a dish that’ll divide your dinner party quicker than a politics debate. There’s pickled green chilli beef, a searing, sour punch to the face in the best way. A winter special lamb hot pot simmers for hours, its richness slowly intensified by slow-cooked bones and peppery magic.

But it’s not all fire and brimstone. There’s a reprieve for those who prefer to survive dinner without fanning their mouths with napkins: braised beef noodles adorned with peanuts for crunch, and tomato beef brisket hotpot that warms rather than torches. The wood-smoked pork belly with garlic sprouts? A masterclass in balance, tradition and restraint.

To wash it down? Bi Luo Chun tea from Hunan’s misty hills – a delicately floral green that kisses the tongue with sweetness and sanity. If spice is chaos, this tea is the harmony that tames it.

The interiors are just as intentional. Designed by Lily Zhang of Latistudio, the fit-out avoids faux-Oriental clichés in favour of a narrative-rich design. A red and blue palette evokes the duality of place: red for Hunan’s heat and boldness, blue as a quiet nod to Australia’s coastal calm. Rich walnut timber flows through the dining space like the roots of a family tree—a grounding element tying the whole thing together. It’s traditional, yes, but told with a modern Australian accent.

“We’re beyond excited to welcome 25 Spices to Market City,” says Ray Khoury, the centre’s manager. “This isn’t just another Chinese restaurant. This is storytelling through spice, and I think it’s going to take Sydney by storm.”

He might be right. Market City is no stranger to eclectic, high-impact cuisine, home to Paddy’s Markets, Hay Street Market, and a veritable United Nations of eateries. But 25 Spices cuts through the noise with the thunderous clang of a wok.

It’s where heritage meets ambition. Where chilli isn’t just an ingredient, it’s a message. Where you can walk in on a Wednesday and walk out transformed—mouth tingling, heart warmed, eyes opened.

25 Spices is now open seven days a week from 11:30 a.m. to 3:00 p.m. and from 5:00 p.m. to 10:00 p.m. It’s on the Ground Floor of Market City, at the corner of Hay Street and Quay Street, Shop 1.01 B. Walk-ins are welcome, but if you’re planning to bring the whole family or an army of spice-hardened mates, best check ahead.
