Inspired by the lemon myrtle, the Citrus Fleur croissant is a one-of-a-kind croissant that has been created by Sofitel Sydney on Darling Harbour’s Executive Chef Ian Burch, weaving the floral notes of lavender and the zesty burst of lemon myrtle into the buttery layers of this French icon. Pushing the artistry of pastry-making into new realms, travellers and locals alike can (re)discover the flavours of Australia through this deliciously floral croissant in Sofitel Sydney Darling Harbour from 5 to 11 May 2025 at Espirit Noir Lobby Bar. (Note: haute croissants in different flavours are available year-round).
Sofitel Sydney Darling Harbour’s Executive Chef Ian Burch remarked:
“I’m proud to bring the Citrus Fleur to Sydney for guests to gift to one-another this Mother’s Day and enjoy from 5 to 11 May. Creating the Citrus Fleur was about capturing my memories of the lavender farm my mother lives near in the UK and inspired by a visit to Bridestowe Lavender Farm in Tasmania. My mother has always cherished the calming scent of lavender and I wanted to pair it with a burst of Lemon Myrtle, to bring a fresh, bright flavour profile that is both refined and refreshing. It’s a loving tribute to my mother that has resulted in a croissant that feels like a getaway in every bite.”
While this limited-edition Citrus Fleur croissant is only available for a short time, the Sofitel Sydney Darling Harbour offers a range of haute croissants every day, year-round, which are typically sold out by mid-morning, so make sure to get in fast! Flavours change with the seasons and depending on the best fresh flavours available. They are becoming a cult classic in Sydney – because no one does croissants better than the only French luxury hotel brand, Sofitel!
La Haute Croissanterie: Where croissants become Haute Couture
Inspired by the excellence and beauty of Haute Couture, the La Haute Croissanterie concept was successfully launched by Sofitel in January 2024 to elevate the art of croissant-making. By blending traditional French techniques with bold and local flavours, every creation reflects the brand’s devotion to refined elegance, while celebrating the unique traditions of each region: an approach that embodies Sofitel’s core values, which highlight local heritage and culture, while infusing each destination with its signature French Zest.
A Limited-Edition Collection: Where Floral Elegance enhances Artistry
The Citrus Fleur forms part of a wider limited-edition collection that has been launched globally by Sofitel, La Haute Croissanterie blossoms, available for only a four-months period starting in May. Drawing inspiration from the timeless floral artistry of French luxury hospitality, the collection marks Sofitel’s very first limited-release collection, turning croissants into a gastronomic adventure where guests can experience local culture like never before. Travellers and locals alike can indulge in croissants at other Sofitel locations including: Sofitel Le Scribe Paris Opera (The Verbena Breeze), Sofitel Marrakech Palais Imperial (The Zesty Orange Blossom), Sofitel Ambassador Seoul (The Seoul Bom Blush), Sofitel Dubai The Palm (The Floral Saffron), Sofitel Mexico City Reforma (The Dalia Rouge), and Sofitel Cotonou Marina Hotel and Spa (The Wild Hibiscus).
It also marks the beginning of a series of limited-edition La Haute Croissanterie collections by Sofitel across the globe to be released on a regular basis, with each to capture a unique and different theme, whilst honouring the elegance and excellence of traditional croissant making.
