IGNIV Bangkok, the one-MICHELIN-starred restaurant at The St. Regis Bangkok, presents a special menu for Thailand’s annual Jay Festival from October 10 – 18, 2026. Created by Head Chef Dominik Falk, the 18-plate sharing experience brings together European flavor profiles with local and Asian influences, reinterpreted through IGNIV’s distinctive approach to modern European cuisine.
The Jay Festival is an annual tradition observed by Thai-Chinese communities, centered on a plant-based dish that excludes meat and certain pungent ingredients. At IGNIV Bangkok, the occasion offers a natural extension of the restaurant’s philosophy of sharing, with a menu designed to be enjoyed together in IGNIV’s relaxed and convivial atmosphere while exploring fresh ingredients through unexpected combinations.
Highlights include snacks featuring mango, soft tofu with ponzu, and jalapeño, followed by mains showcasing seasonal vegetables such as carrot and eggplant. The experience moves into dessert with sakura, shiosuke, and chestnut before concluding with IGNIV’s signature Candy Store, offering a choice of chocolates, fruit jellies, lollipops, chocolate cookies, and panfortes.
Head Chef Dominik Falk took the helm of IGNIV Bangkok in September 2026, bringing experience from some of Switzerland’s most acclaimed kitchens. The 30-year-old Swiss chef previously served as Sous Chef at Andreas Caminada’s three-MICHELIN-starred Schloss Schauenstein, developing a culinary approach grounded in precise technique, seasonality and the sharing philosophy at the heart of IGNIV.
The IGNIV Jay Menu is available from October 10 – 18, 2026, priced at THB 4,200++ per person. From Monday to Friday, it is served for lunch from 12:00 PM – 3:00 PM and dinner from 6:00 PM – 11:00 PM. On weekends, it is available for brunch from 11:00 AM – 3:00 PM and dinner from 6:00 PM – 11:00 PM.
