Crystalbrook Collection Hotels & Resorts has officially opened reservations for Crystalbrook Sam, its first South Australian hotel, ahead of opening in late December 2026.

Set on leafy Halifax Street, just three streets south of Adelaide Central Market, the 196-room luxury hotel has been designed as a centred and generous new place to stay, dine and spend time in the city. Bringing together the pleasures Adelaide is renowned for, from good food and wine to art, culture and an enviable pace of life, Crystalbrook Sam pairs a distinctly local sensibility with Crystalbrook’s personality-led approach to contemporary luxury.

Equal parts relaxed and lively, Crystalbrook Sam is designed as both sanctuary and springboard for exploring the city. Kelvin Dodt, General Manager of Crystalbrook Sam, added: “Guests can settle into Adelaide’s lifestyle without leaving the hotel, from spa afternoons and long lunches to a glass of wine downstairs or dinner with views across the city. Step outside and Adelaide is right there: galleries, laneways, markets, neighbourhoods and festival precincts all within easy reach.”

Geoff York, CEO of Crystalbrook Collection Hotels & Resorts, said: “Crystalbrook Sam represents an exciting new chapter for Crystalbrook as we bring our personality-forward and locally inspired hotels to South Australia. Adelaide has a distinct creative energy and an extraordinary food, wine and cultural spirit. Crystalbrook Sam has been designed to belong here, bringing together locally made art, South Australian produce and generous Adelaide hospitality.”

At the top of the hotel, Matines will make its debut with South Australian produce cooked over fire, local oysters and coastal favourites, generous plates and martinis served alongside views across the city and towards the Adelaide Hills. Designed for lunches worth lingering over, dinners with a little theatre and drinks that can comfortably become another round, the 120-seat rooftop venue will welcome Adelaide locals and hotel guests alike. Closer to street level, Café Sami, the hotel’s lobby cafe and bar, will shift comfortably from morning coffee to afternoon wine and evening drinks. A tucked-away library nook offers a quieter proposition altogether for anyone who would rather disappear into a book or simply claim a corner.

For those whose itinerary involves doing considerably less, Eléme Day Spa will offer massages, facials and restorative treatments, complemented by the hotel’s heated outdoor pool and sauna. A fully equipped gym is also on hand for guests who prefer their downtime with a little more movement. Upstairs, rooms and suites take cues from South Australia’s coastline through soft tones, natural textures and diffused light. The suites add deep-soak baths, double vanities, showers with body jets and separate living areas, alongside thoughtful social touches including a mobile cocktail and aperitivo cart for when the evening calls for something a little livelier.

Crystalbrook Sam’s design has taken its cues directly from its unique position in Adelaide, with the geometric sawtooth rooflines inspiring the sculptural form of the building, while its orientation brings northern light and city views into every guest room. Designed by South Australian practice PACT Architects and  constructed by BESIX Watpac, the hotel brings a local architectural perspective to its place in the city, with bronze-coloured metals, local brick and locally coloured concrete among the materials shaping its exterior.

Inside, considered interiors meet a striking collection of sculptural art that unfolds throughout the property. Developed through a studio-led, locally driven approach, the art programme brings together South Australian sculptors and local makers, with works woven through the lobby, corridors, guest rooms, wellness and dining spaces.

With opening rates starting from $275 per night, accommodation spans plush king and twin rooms with city and Adelaide Hills outlooks, interconnecting family rooms and suites with up to 78 m² of space. Each room also features 100% waste-free bathroom amenities, including compostable or biodegradable products, bringing Crystalbrook Collection’s Responsible Luxury philosophy into the everyday guest experience.

To mark the opening, guests can book the ‘Sam’s Warm Welcome’ package, available exclusively for direct bookings made on the official website before 17 December 2026 for stays until the end of August 2027. The experience includes two welcome martinis, a signature Sam snack, a bespoke finishing salt to take home, a $25 food and drink credit to use across the hotel and noon late checkout.

Guests booking Crystalbrook Sam’s ‘Stay Only’ rate will also enjoy ‘Sam’s Shout’, a little something extra revealed at check-in. It could be a sip, a snack, an upgrade or something local to take home. What exactly? Well, that would ruin the surprise.
