The evening offers a rare dual experience: an intimate mixology masterclass followed by a high-energy public guest shift. Placing a vibrant spotlight on two of the region’s leading female bartenders, Graham will collaborate with The Langham, Hong Kong’s Head Mixologist, Hinata Chang, to serve a curated menu of four headline cocktails.

This takeover marks the exclusive overseas debut of Tokyo Confidential’s brand-new menu theme, Konbini Confidential, on a guest shift. The theme showcases Japanese ingredients in highly creative, unexpected ways.
The Exclusive Cocktail Menu Featuring The Langham Gin
The one-night-only menu features three signature creations from Graham, including two gin-based drinks that pay homage to Palm Court’s legendary 350-gin collection:
- Celery Man: A grassy, light, and refreshing mix of Yuzushu, Ume, Celery Soda, Citrus, and the premium Langham Gin—which is exclusively made with hand-picked botanicals, including the finest juniper berries, locally sourced raw honey, delicate ginger lily, and Chinese jasmine tea.
- Always Sunny in Azabu: A combination of Mikan Gin, Mikanshu, Yakiimo Shochu, and Grand Marnier. Profile: Sweet, fruity, strong.
- Caramel Corn Sidecar: A blend of Rémy Martin VSOP, Vodka, Strawberry Mistelle, Almond Caramel, and Lemon. Profile: Intense, acidic, toasty.
Rounding out the menu is a bespoke creation from Chang:
