Crown Melbourne is bringing a bold new Las Vegas-inspired entertainment and dining experience to Melbourne, unveiling two major new hospitality concepts from global venue operator Clique Hospitality as part of its ongoing $200 million redevelopment.
The new venues — Amaya Modern Mexican and Barbershop Cuts & Cocktails — are designed to create an immersive nightlife precinct where guests can seamlessly move between dining, cocktails, music and entertainment throughout the evening.
Amaya Modern Mexican
Set along Crown’s Riverwalk precinct, Amaya Modern Mexican will deliver a high-energy dining experience inspired by the spirit of coastal Mexico. The restaurant will feature:
- Fire-roasted meats
- Fresh seafood
- Share-style dining plates
- Curated tequila and mezcal cocktails
- Live DJ entertainment
The venue is positioned as a vibrant social destination focused on atmosphere, flavour and nightlife energy.
Barbershop Cuts & Cocktails
Barbershop Cuts & Cocktails introduces a modern speakeasy concept hidden behind a functioning barbershop entrance. The venue blends prohibition-era inspiration with contemporary rock-and-roll styling, featuring:
- Live rock music
- Moody whisky-bar aesthetics
- Premium whisky cocktails
- Table service with theatrical flair
The concept aims to create an experiential nightlife destination built around discovery and exclusivity.
Part of Crown’s Major Precinct Evolution
Clique Hospitality CEO Andy Masi said the venues are designed to create memorable, emotionally engaging social experiences.
Crown Melbourne CEO Ed Domingo described the project as part of a broader transformation focused on giving guests more diverse entertainment and dining choices under one roof.
Over the next 18 months, Crown Melbourne plans to introduce more than 15 new venues across the precinct, ranging from casual Riverwalk concepts to premium dining experiences including Mott 32 and the upcoming Victor Churchill restaurant opening in 2027.
Amaya Modern Mexican and Barbershop Cuts & Cocktails are scheduled to open in early 2028.
