Carousel London, a family-run dining haven, is reversing this narrative by bringing distinguished international chefs to the heart of London for a one-of-a-kind gastronomic gala.

With over 300 chefs from 50 global cities and 30 countries showcasing their skills since its inception eight years ago, Carousel continues to redefine London’s vibrant culinary scene. This unconventional food-lovers paradise, renowned for its diverse weekly guest chef rotations, ticketed menus, and communal dining space, is geared up for its latest culinary event.

Adding another jewel to its illustrious crown, Carousel will host Julian Hills, a celebrated Melbourne-based chef from Restaurant Navi, for an exclusive residency in August. Between the 8th and the 12th, Julian will acquaint London’s food connoisseurs and discerning global travellers with his elaborate tasting menus and unique ingredient combinations.

Enjoyed by locals and critics alike, Restaurant Navi’s reputation isn’t bolstered by media-savvy celebrity chefs or reality TV hype. Instead, the two-hatted Melbourne institution has quietly claimed its spot as one of the city’s premier dining locations. With 32 seats and an ever-evolving contemporary tasting menu, Navi offers an authentic showcase of Hills’ creativity, passion for local produce, and innovative culinary techniques.

During his residency at Carousel, Julian intends to tantalise London’s culinary scene with modern Australian cuisine, featuring his most famous creations from Navi. Signature dishes include Navi’s Black Garlic and Salmon Roe Macaron – a salty and savoury take on a French classic, and Elements of Duck – a lockdown project where Julian ingeniously uses every bit of a Dry-Aged Duck to serve up mouth-watering dishes such as Cherry-Lacquered Duck Hearts, XO Sauce, Parfait Cigar, and Rendered Duck Breast.

chef Julian Hills food selectionThe Australian chef also plans to serve an exciting blend of native English and Australian specialities, with dishes like Langoustine with Radish and Earl Grey and Local Cheddar with Pecan, Honey, Salted Apricot, Wattle Seed, and Mountain Pepperberry on the menu.

To emulate the Navi experience, Carousel staff members are trained to understand and execute Julian’s culinary style and ethos. Wine and cocktail pairings are also meticulously planned to harmonise with the menu. This collaborative endeavour provides a unique learning opportunity for the Carousel team to explore different cuisines, cooking techniques, and philosophies.

Commenting on his first-ever residency, Chef Julian Hills expressed his excitement, “This is a unique opportunity, and I’m thrilled to be bringing the taste of Yarraville to London’s discerning foodies, providing them with an authentic Navi experience in their city.”

Chef Julian Hills’ residency at Carousel London is scheduled from the 8th to the 12th of August. Set menus are priced at £65 from Tuesday to Wednesday and £75 from Thursday to Saturday.
