A Career Built Across Luxury Hotels

Adrian’s passion for food was first ignited after leaving school, travelling across America, Spain, Norway, Peru, Turkey, and Italy, where he explored local markets and regional culinary traditions.

Upon his return, he began his culinary journey at Kingsleys Steakhouse in Woolloomooloo, where he completed his apprenticeship. He went on to spend six years at Banjo Paterson Cottage Restaurant in Gladesville, rising from second-year apprentice to Junior Sous Chef, mastering the demands of large-scale events, weddings, and à la carte dining.

He later moved to London where he gained valuable international experience working across acclaimed wine bars, luxury restaurant groups, and exclusive private members clubs. Returning to Sydney in 2020, Adrian continued to deepen his expertise in luxury hotel dining, holding the role of Sous Chef at The Langham Sydney and contributing to the opening team at Capella Sydney.

Joining Pier One Sydney Harbour marks a key milestone in his career, offering Adrian the opportunity to creatively influence the culinary offering at Pier Bar & Dining.

“I know and love the hotel, so having the opportunity to take ownership of the menu in such a beautiful, unique location is an incredible next step in my career,” said Adrian Widders, Chef de Cuisine at Pier Bar & Dining. “My style is all about honest food – getting exceptional produce, cooking it well, and serving it fresh without overhandling it.”

A Fresh Mediterranean Vision for Pier Bar & Dining

Adrian is focused on refining the guest experience across Pier Bar & Dining, bringing Sydney harbour-side dining to life through vibrant Mediterranean-inspired dishes, high-quality local produce, and seamless waterfront service from sunrise through to sunset.

Guests can expect a cohesive, approachable menu balancing classic techniques with native Australian ingredients alongside dynamic seasonal specials, giving the kitchen team the space to experiment with fresh seafood and local catches.

“Our vision is a vibrant, welcoming restaurant where a happy team is serving great food that keeps both locals and hotel guests coming back time and again,” added Adrian. “We are blessed with an unmatched waterfront setting, and our goal is to create a comfortable, flavourful dining experience that everyone can enjoy.”
