Tilda at Sofitel Sydney Wentworth, the hotel’s signature Australian restaurant, is celebrating 60 years of The Wentworth with the return of its original 1966 cheesecake – bringing one of the hotel’s most-loved culinary signatures back to the table six decades later.
Sixty years ago, The Wentworth opened its doors as Australia’s first five-star international hotel. Originally built by Qantas, the hotel became a Sydney destination for visiting celebrities, politicians and royalty and it was here that guests got their first taste of a cheesecake that would become part of The Wentworth’s history. Now, the original Wentworth Cheesecake is back.
When The Wentworth opened in 1966 as Australia’s first five-star international hotel, it quickly became one of Sydney’s most glamorous addresses, welcoming visiting celebrities, politicians and royalty. Among its culinary signatures was a cheesecake that became so popular its recipe was subsequently published in The Australian Women’s Weekly, taking a taste of The Wentworth from the hotel dining room into kitchens around the country.Carefully preserved for six decades, the original recipe is now being brought back to life by Pastry Chef Ashleigh Otto and the hotel’s pastry team. Ashleigh Otto says, “This cheesecake is part of our history because it’s been passed down through each generation of chefs who have worked at The Wentworth. Every step and every slice has been made with care, creating its signature buttery soft moreish texture. Between the lemon zest and the vanilla bean, there is a really nice pairing within the cheesecake. It’s more than just a dessert, it’s a tradition and a timeless piece of Wentworth History.”
The Wentworth Cheesecake can be found at Tilda, a modern contemporary restaurant championing Australian local produce. For those who remember the original, it’s a familiar favourite. For those discovering it for the first time, it’s a chance to enjoy a little piece of Sydney history, one slice at a time.
