Nestled between gardens, sea and mountains, the three-Michelin-starred restaurant in Menton has gracefully navigated two decades of emotion, culinary experimentation and environmental innovation – always guided by its twelve acres of permaculture gardens and its deep respect for nature. To celebrate this anniversary in fitting style, Mauro Colagreco proposes an unprecedented gesture to Ferran Adrià: a culinary curatorship that highlights the evolution of his work.
To mark the 20th anniversary of Mirazur***, Chef Colagreco is introducing an initiative never before undertaken, neither in his restaurant – voted the World’s Best Restaurant – nor anywhere else: the invitation of a “gastronomic curator”, so that creativity may be expressed through the organization and analytical reading of his culinary journey. And to orchestrate this exceptional experience, to be discovered throughout April 2026, he has called upon the man who forever changed the course of global gastronomy: the visionary Ferran Adrià.
An emblematic figure of contemporary cuisine, Ferran Adrià is the legendary chef behind elBulli, named the World’s Best Restaurant five times. Together with his brother Albert and Juli Soler, Adrià transformed this space into the cradle of “techno-emotional” cuisine, a revolutionary approach that forever changed the way gastronomy is perceived, combining technique, creativity, and emotion in every dish. Since the closure of his mythical restaurant in 2011, the Catalan has devoted his time to research, innovation, and the transmission of knowledge; through elBullifoundation, he fosters imagination and critical thinking among young chefs.
His participation in this experience is entirely altruistic, celebrating the friendship, passion, and creativity that unite him with Mauro Colagreco. Mirazur invites those who wish to contribute to do so through a donation to the foundation, helping to support the next generation of chefs and taking part in an act of solidarity and commitment to the future of gastronomy.
For this reason, the Mirazur*** family has the honor of welcoming him as creative director of this unprecedented, ephemeral celebration retracing twenty years of passion, creation and transformation. Ferran Adrià is currently studying the restaurant’s cuisine with an amused yet analytical eye, at the crossroads of art and knowledge. Understanding what has been done, identifying key milestones, recognising its evolution, pinpointing defining transformations, questioning what already exists… all essential explorations in staging a 20-year trajectory within a single menu!
His approach will spotlight the evolution of recipes, techniques and iconic dishes from the first restaurant to be both B Corp and Plastic Free certified, weaving in the ingredients and cultural as well as geographical influences that have shaped two decades of culinary generosity, along with the defining hallmarks of the anniversary itself. Through the structuring of this festive journey, Colagreco and Adrià will present a deliciously creative retrospective, reflecting an original and profoundly enlightening reading of the Mirazur universe. They will also pay tribute to the rich heritage of French haute cuisine, from great masters such as Auguste Escoffier and Antonin Carême to the innovations of nouvelle cuisine, showing how these legacies have inspired and enriched the contemporary vision.
