Until January 2025, restaurant-goers will have a fresh reason to reel in their seafood cravings as Allegro Restaurant at The Westin Melbourne launches Tide To Table – a six-course dining experience that dives deep into the flavours of the ocean, whilst championing marine conservation.

Curated by Executive Chef Apoorva Kunte and his talented team, each course pays homage to the ocean by spotlighting Australia and New Zealand’s finest and sustainably sourced seafood from fisheries committed to responsible practices.

This menu celebrates the freshest seafood, sourced directly from sustainable fisheries dedicated to preserving our oceans”, Apoorva Kunte.

The exciting menu features:

  • Native Oysters: Sustainably-farmed Sydney Rock and Pacific Tasmanian oysters, a keystone species shucked by hand. Served with blackberry and pomegranate balsamic (GF)
  • Ora King Salmon: Hailing from New Zealand, this salmon is prized for its quality, raised through sustainable husbandry practices. Paired with kokum, coconut yoghurt, yuzu koshu, and green mango (GF, H)
  • Pan-Fried King Prawns: Wild-caught from the coasts of Eastern Australia, these prawns offer a mild and sweet flavour. Accompanied by Campari watermelon, garlic butter, sweet and sour jam, and mandarin oil (CD)
  • Spencer Gulf Kingfish Collar: The icy waters of South Australia’s Spencer Gulf produce firm, delicate flesh, renowned for its superior taste. Served with kumquat, tomato, coriander, and citrus dressing
  • Pan-Fried Humpty Doo Barramundi: Sustainably farmed in the Northern Territory, grown in a saltwater wetland system and cleaned using saltwater grasses. Served with yellow pea ragout and crispy okra (CD, GF)

To finish, guests will be able to indulge in an exquisite Basque burnt chocolate cheesecake, featuring Cacao Trace 100% sustainable white chocolate. Each indulgent bite not only tantalizes the taste buds but also champions a noble cause, with a portion of the proceeds from the purchase of our chocolate directly supporting cacao farmers and their communities.

Available for pairing with the menu is a selection of wines from Tahbilk, a Victorian winery based in Nagambie Lakes that is renowned for being one of Australia’s first families of wine, and a well-established commitment to sustainability. As a certified Carbon Neutral winery, Tahbilk leads in eco-friendly practices, including wetlands restoration and sustainable viticulture. These wines perfectly complement our dishes while supporting a greener future, and will be available to order by the glass, or to enjoy as a flight add-on with the 6-course menu.

More than a simple dining experience, Tide To Table forms part of a global sustainability initiative between The Westin Melbourne and Marriott International, emphasising their commitment to protecting marine habitats.

At $110 per person, every Wednesday to Saturday from 5pm, this limited-time experience offers a chance to taste the ocean while supporting its future. Bookings can be made via the restaurant’s website or through Open Table.
