 La Terrazza at Hotel Eden – part of Dorchester Collection – has been awarded one Michelin star in the latest edition of the guide, reaffirming its position among Italy’s leading restaurants. The achievement reflects the restaurant’s culinary vision and the work of the entire team led by executive chef Salvatore Bianco and general manager Mirko Cattini. Located on the top floor of the hotel, La Terrazza offers guests mesmerising views over Rome alongside a remarkable dining experience.

The Michelin star comes just 18 months after Bianco joined Hotel Eden, highlighting the impact of his vision. Born in 1978 in Torre del Greco, Naples, Bianco has had a career marked by significant milestones. Early in his career he met Gualtiero Marchesi, a connection that later led him to become Marchesi’s sous chef in Rome. After returning to Naples, he spent more than a decade heading the kitchen at Il Comandante where the restaurant gained and retained a Michelin star from 2012 as a result of his talent and approach.

Having grown up in his family’s sculpture and painting studio, Bianco sees cuisine as “the only form of art able to engage all the senses at once”. His guiding principle, “the avant-garde of the past”, expresses a philosophy that blends memories with innovation, tradition with technique and is rooted in local culture whilst incorporating global influences.

His cuisine has a distinctly Mediterranean identity, shaped by careful sourcing and a style that tells stories through ingredients, landscapes and memories. At La Terrazza he offers two tasting menus that reinterpret Italian culinary tradition in a contemporary way, alongside an à la carte selection. His signature dishes include spaghetti with acorns, roasted coffee, Kentucky tobacco and barley, Pigeon with persimmon kimchi, pepper, kombucha and chestnuts, and Cuttlefish with sea vignarola.
