This limited-time five-course wine-paired experience marks a milestone for SanSara following its relaunch, presenting a rare cross-cultural journey where French refinement meets the soulful depth of North Indian cuisine.

Co-created by Chef Eric Costille, Vice President of Global F&B at Millennium Hotels and Resorts, and Master Chef Pannalal Nath, Indian Chef de Cuisine at SanSara, the menu celebrates creativity, heritage, and harmony on the plate. The collaboration is presented in partnership with the High Commission of India in Singapore, commemorating 60 years of diplomatic relations between India and Singapore.

Highlights from the menu include:

  • Tali Hokkaido Scallops — lightly marinated with turmeric and ginger, complemented by basil aioli
  • Kumbh Ki Galouti — minced mushroom cake with nutmeg, sautéed porcini and truffle ricott
  • Silver Hill Duck Two Ways — a conversation between Canard à l’Orange and biryani
  • Pav-Halwa — a whimsical finale marrying French meringue artistry with Indian sweetness

Each course is paired with curated vintages from Domaine d’Aussières and Les Légendes R by DBR Lafite, chosen to enhance the interplay between French technique and Indian spices.

Bookings are now open for dining between 5 December 2025 and 4 January 2026.
