 This Autumn from now – 30 November, Ming Pavilion at Island Shangri-La invites guests to celebrate the arrival of hairy crab season, one of the most anticipated culinary highlights of the year. Renowned for its rich, golden roe and delicate sweetness, the hairy crab is a true seasonal delicacy – and at Ming Pavilion, it takes centre stage in a menu that beautifully captures the essence of Fujian cuisine.

In homage to the restaurant’s Minnan culinary roots, Executive Chef Jack Lam presents an exquisite à la carte selection and a Seasonal Hairy Crab Set Menu (7 courses with a total of 10 dishes at HK$988 + 10% per person), thoughtfully crafted to highlight the crab’s natural richness and delicate texture.

For those seeking a curated dining experience, the Seasonal Hairy Crab Set Menu (HK$988 + 10% per person) showcases a refined progression of dishes that highlight the crab’s natural sweetness and depth of flavour.

The menu begins with the Yongchun Aged Vinegar Hairy Crab Terrine, followed by the Fresh Crab Meat Thick Soup with tofu and spring onion, a comforting prelude to the Braised Tofu with Hairy Crab Meat and Scallop. Seasonal greens shine in the Fuzhou-Style Stir-Fried ‘Shan Su’ Vegetable with Hairy Crab Roe, leading to the centrepiece of the experience – a perfectly Steamed Whole Hairy Crab (150g). The meal continues with the Wok-Fried Hairy Crab Roe with Crispy Rice Noodles and concludes on a refreshing note with the Bird’s Nest with Coconut Milk Terrine.
