Accor, the largest hotel operator in Australia and New Zealand, has announced the launch of Table For – a new in-house food and beverage group designed to set new standards in culinary experience, creativity and commercial performance. Its first restaurant, Flaminia, will open at Pullman Quay Grand Sydney Harbour this Summer, with exciting new concepts set to follow.
With a portfolio of more than 440 restaurants, bars and cafes in the Pacific, Accor has long been at the forefront of hotel hospitality. Table For builds on this foundation with a focused investment in culinary innovation and guest experience, shaping restaurants and bars that are creatively led, operationally sharp and culturally resonant.
Operating as a full-spectrum group, Table For will unite internal experts across culinary, operations, design and guest experience, supported by select collaborators including hospitality luminaries Stefano Catino and Vince Lombardo of the Maybe Group and earned-led culture agency Example.
The groupʼs remit spans the evolution of existing venues and the creation of new hospitality concepts across cuisines, occasion and audiences – all shaped by guest insights, local relevance and global best practice.
Adrian Williams, Chief Operating Officer, Accor Pacific, said: “We love the way culinary experiences bring people together, and with Table For weʼre taking that to an entirely new level. This initiative unites the finest visionaries in food and beverage – from our in-house teams to collaborators like Stefano Catino and Vince Lombardo and Example – to create restaurants and bars that are bold, culturally inspired and operationally sharp”
He continued: “We are redefining what it means to dine in a hotel, and treating our restaurants and bars as standalone heroes that locals and travellers actively seek out. This is about celebrating creativity, elevating our guest experience and delivering real value for our partners. Through Table For, weʼre reimagining existing venues, developing entirely new concepts, and delivering experiences that guests and locals will seek out, enjoy and remember.”
Ben Creek, Head of Table For, said: “After a tremendous period of momentum across our F&B portfolio, weʼre excited to move into this next phase with even greater focus, creative ambition and long-term investment. Table For gives us the platform to launch bold new concepts, reimagine existing venues and stay ahead of the evolving tastes of guests and locals alike. Importantly, it not only sharpens how we operate and deliver, but also celebrates the power of collaboration in bringing great ideas to life”.
The group is led by Creek, whose two-decade career spans three continents and leading roles in some of the most globally recognised hospitality operators. He is joined by Chris OʼConnor, a former chef and senior operator with over 25 yearsʼ experience across large-scale portfolios; Jenn Pride, a guest experience leader known for landmark venue launches at Merivale; and Culinary Director Rosy Scatigna, a globally trained chef celebrated for her creative and technical skill.
Stefano Catino and Vince Lombardo – the creative forces behind Maybe Sammy, a perennial on The Worldʼs 50 Best Bars list and one of Australiaʼs most awarded cocktail destinations – will lead beverage innovation and hospitality for the Table For portfolio, alongside alongside acclaimed winemaker and sommelier Shun Eto. In an exclusive arrangement with Accor, this marks the first time the duo has partnered at scale with a global hotel group, bringing their internationally lauded craft, theatrical service style and deep industry influence to reimagine bar culture across the portfolio.
Stefano Catino and Vince Lombardo, The Maybe Group said: “Partnering with Accor on Table For is an incredible opportunity to bring our passion for world-class hospitality to a whole new stage. Weʼve always believed that great bars are more than just places to have a drink – theyʼre experiences that connect people, spark conversation and leave a lasting impression. We canʼt wait to bring our creativity, expertise, and love for hospitality to life within the group, working hand in hand to develop venues that not only delight guests but also set new benchmarks for innovation in the industry”.
Example, led by founders and hospitality marketing heavyweights Andy El-Bayeh and Rebecca
Jarvie-Gibbs, will support Table For across strategy, brand development, design direction, marketing and PR. The agencyʼs multidisciplinary collective of strategists, designers, PR specialists, interior collaborators, and music and culture experts will work in sync with Accorʼs in-house team.
Importantly, Table For will not only service Accor-managed properties – it has been designed to support the groupʼs wider network of owners, developers and franchise partners, delivering scalable, high-performing F&B concepts across a diverse range of markets and asset types.
Table For builds on Accorʼs recent momentum in redefining hotel dining, with standout openings and collaborations across the portfolio. Sofitel Sydney Wentworthʼs $70 million transformation introduced a sophisticated dining precinct featuring four venues by House Made Hospitality – Tilda, Bar Tilda, Delta Rue and Wentworth Bar. Through its partnership with Ennismore, Accor is rolling out headline hospitality concepts across Australia – Hyde Melbourne Place, the new Mondrian Gold Coast, and the soon-to-open 25hours Sydney The Olympia, which will be home to the Mulwray Bar and the Sydney debut of Londonʼs acclaimed Palomar under Culinary Director Mitch Orr.
Creative development is already underway for Table For venues, with the first, Flaminia, an inspired collaboration with Chef Giovanni Pilu, set to launch later this year alongside several other exciting concepts in Sydney.
