Launching on 12 September in the hotel’s elegant Aria Bar & Lounge, the new Spring Afternoon Tea menu is a celebration of springtime produce, refined techniques, and international collaboration. This season’s offering is the result of a unique initiative led by the Langham Hospitality Group’s Afternoon Tea Académie, which brought together the pastry chefs from Langham hotels across the Pacific region.
Gathering in one location, these culinary experts collaborated to create a harmonised seasonal concept, ensuring that each Langham property reflects a cohesive brand identity while still showcasing local flair. The result at The Langham, Melbourne is a collection of intricately crafted, visually stunning and delicious pastries that honour both innovation and heritage.
Spring Afternoon Tea Highlights
Inspired by the Pastry Académie, three standout creations include:
- Strawberry & Lime Turret – A delicate white chocolate mousse filled with lemon curd and a strawberry-lime confit insert, placed on a strawberry sable and glazed with a zesty lime finish.
- Apricot & Peach Delice Tart – Featuring a caramel short crust base, apricot compote, smooth peach mousse, and topped with a glossy apricot and peach jelly.
- Rose & Lychee Dome – The signature Langham pink creation: lychee and raspberry mousse paired with baked cheesecake on a pink rice puff base, as playful as it is sophisticated.
Additional seasonal highlights include:
- Amarascata Cherry – A rich Valrhona Equatorial Noire 55% chocolate mousse encasing a cherry trio insert (sour cherry, Amarascata, and Griotine), set atop a Kirsch-soaked chocolate cherry brownie.
- Vanilla & Rhubarb Pavlova for Two – Designed for sharing, this reimagined pavlova features a fresh new presentation, bringing a modern twist to a timeless classic.
Guests can enjoy their Afternoon Tea with a curated selection of Langham specialty teas or elevate the occasion with a glass of sparkling rosé.
