Available on request, included in the nightly rate, the “Tribute to the Sea and Land” showcases a carefully curated selection of fresh and vibrant ceviches, each meticulously paired with premium Mexican Sauvignon Blanc wines chosen to enhance their distinctive notes and textures. The meal celebrates the masterful pairing of coastal cuisine and Mexico’s evolving wine culture, creating an authentic reflection of the country’s diverse culinary landscape.
The tasting menu starts with a Watermelon Ceviche featuring ponzu sauce, sesame, and avocado, served with a cilantro tostada and paired with Tres Raíces Blanco Joven Sauvignon Blanc from the Bajío region in Dolores Hidalgo, Guanajuato. This young, fresh wine perfectly complements the watermelon’s natural sweetness and the ponzu’s bright citrus notes. The second course presents Scallop Green Aguachile Ceviche accompanied by a plantain tostada, paired with Sierra Blanca Sauvignon Blanc from Baja California’s renowned Valle de Guadalupe. This wine enhances the freshness and spicy character of the aguachile while honoring the coastal region from which the scallops originate. The culminating course features Lobster Ceviche with mango pico de gallo, served with a blue corn tostada and paired with Casa Magoni Sauvignon Blanc, also from Valle de Guadalupe. The wine’s aromatic profile and structure provide the ideal accompaniment for the lobster’s delicate flavors and the tropical sweetness of the mango.
The “Tribute to the Sea and Land” experience is available from July 15th through December 30th, 2025.
