Curated by Chef Borja Terry Borrego, Chef de Cuisine at UNO MAS, the Champagne Brunch is a vibrant homage to the rich culinary traditions of Spain – reinterpreted with seasonal ingredients and the finest global produce.
Tailored for discerning palates, this once-a-month experience unfolds as a Mediterranean feast in the sky. The menu features a luxurious array of delicacies, from hand-carved Jamón Ibérico and A5 Kobe beef sashimi to Alaskan king crab, Maine lobster, and tiger prawns, accompanied by artisanal tapas and freshly shucked oysters. Each dish is a celebration of Spanish soul and flavour, elevated with contemporary finesse and flair.
Each dish is complemented by free-flow Champagne Pommery Brut Royal N.V, celebrated for its vibrant freshness, delicate bubbles, and elegant citrus notes. The bubbly of choice is the perfect companion to UNO MAS’s seafood-forward brunch. Its clean, lively character enhances the natural sweetness of lobster, oysters, and king crab, making every bite sparkle just a little more. A curated selection of fine wines (both red and white) and soft drinks is also included, making it three hours of pure indulgence in every glass.
