In celebration of its fifth anniversary, The Ritz-Carlton, Perth has announced the start of a new chapter of its celebrated partnership with Fervor, the renowned Western Australian culinary collective. Since their collaboration began in 2023, the two have shared a passion for unearthing unique Australian produce, creating unforgettable experiences that connect guests to the heart of Western Australia. What started with a degustation event at Hearth, featuring wild native ingredients, blossomed into unforgettable itineraries connecting guests to the remote corners of the state.

Now, a series of extraordinary culinary events will offer guests the opportunity to more intimately get to know the time-honoured tradition of cooking over fire with a specific focus on native produce, led by the passionate teams at Hearth and Fervor.

The evolution will bring Fervor’s philosophy to life at Hearth through a series of seasonal experiences that showcase their core principles in new and exciting ways throughout the year. Outdoor Fire Feasts, where open fire cooking takes centre stage, alongside the transformation of Hearth’s existing intimate, interactive Chefs’ Counter experience. These events will offer a rare opportunity to engage directly with Fervor and Hearth chefs, providing a deeper understanding of the ingredients and techniques that make these dishes truly extraordinary. The first event in the series will take place on Saturday 9th and Sunday 10th May 2025, with additional events throughout the year. Guests will be treated to an evolving menu inspired by the seasons, crafted from the finest ingredients sourced from across all regions of Western Australia, some of which are only available in limited quantities.

At the Hearth X Fervor Fire Feasts guests will be able to enjoy the signature tastes of Hearth and Fervor in an alfresco setting on the terrace at Hearth. With relaxed style seating where guests can share in the communal dining experience Fervor is known for. Attendees will have a chance to meet and chat with Hearth Chef De Cuisine Brian Cole and Fervor Executive Chef Paul ‘Yoda’ Iskov while they prepare the shared dinner at the outdoor open firepit. Diners will enjoy Hearth’s refined take on cooking in a three-course menu with canapés using time honoured techniques and ingredients like bloodroot, emu plum, kangaroo, lemon gum, native basil and red centre lime.

At the Fervor Chefs’ Counter – an intimate experience for only six diners – guests can look forward to a one-of-a-kind experience with interactive dishes like smoking plates, coal toasted meringue, and broth poured at the table offering a new level of interaction with Chef Brian Cole and Chef Paul Iskov. Expect to see ingredients such as youlk, boab tuber, crocodile tongue, ants, boab in the shell, Kulyu and Karkalla – produce unique to Australia that Paul believes should be celebrated – and that will be showcased in expertly crafted dishes, whilst keeping the ingredients in their purest form to showcase their natural flavours. Each event will be a chance to witness the creativity and passion behind Fervor’s culinary style, bringing a deeper connection to the land.

In addition to the vibrant culinary offerings, guests will gain insight into how these ingredients are sourced, with a special focus on the role of local Elders in protecting native plants and animals.

The Ritz-Carlton, Perth continues to honour the spirit of Western Australia through its design and experiences. From the local materials weaved throughout the architecture of the building, to the local produce-led menus at Hearth, the hotel is a true celebration of the land’s beauty. With the expansion of the Fervor partnership, the hotel remains dedicated to offering guests an authentic, immersive journey through food into the heart of the region.
