Not That Bloody MaryThe newly opened Bamboo Bar, situated in the bustling Lan Kwai Fong district of Central, is making waves with its innovative cocktail menu featuring Chinese baijiu-based creations, artisanal highballs, and craft beers. Complementing the drink offerings is a delectable food menu highlighting Sichuan cuisine, promising a tantalizing gastronomic experience. During its opening period, Bamboo is enticing patrons with a lively happy hour promotion – buy one, get one free on selected beverages.

The vision behind Bamboo was to establish a community-oriented bar that would bring people together through an ever-evolving calendar of themed events and activities. Whether visiting solo or with friends, guests can immerse themselves in Bamboo’s singular ambiance, leaving their worries behind as they unwind and forge new connections.

Pioneering Chinese Baijiu Cocktail Creations

Bamboo’s cocktail program is helmed by seasoned bartenders Felix and Cain, who have drawn on their exceptional creativity and passion for mixology to curate a menu showcasing innovative Chinese baijiu-based concoctions. The “Not that Martini” (HK$99) takes the classic martini as its template, with Felix infusing Feng liquor – a fragrant Chinese baijiu distilled from sorghum – with grapefruit peel and blending it with gin and Lillet Blanc infused with jasmine tea. The resulting drink retains the potency of the baijiu while being elevated by citrus and floral notes.

The “Not that Bloody Mary” (HK$99) sees house-made Guizhou sour soup infused into a savory-style baijiu, artfully balanced with clarified tomato juice and lemon – a tribute to the iconic Guizhou sour fish soup. The umami-rich baijiu lends depth and lingering complexity to the cocktail’s pleasantly tart and spicy profile.

For the “Not that Alexander” (HK$99), the bartenders have combined Langjiu baijiu with vodka, crème de cacao, and local evaporated milk. The robust, aromatic Langjiu provides a solid foundation, its rich, clean character harmonizing with the subtly sweet chocolatey notes.

Beyond the classic Highball, the bar also offers an array of distinctive Highball variations to delight the palate on scorching summer days. These include a refreshing Shiso Highball, a delicate Osmanthus-infused Highball, a fragrant Oolong Highball, and a zesty Ginger Highball with citrus notes. These expertly crafted Highballs showcase layers of flavour complexity. The bar also features a selection of popular local craft beers from Black Kite, Heroes, Neon Cider, as well as the acclaimed Magpie from Korea.

Sichuan-inspired Bar Bites

The bar menu features a tantalising selection of Sichuan-inspired bar bites (starting from HK$22). The crowd-pleasing Shengzhou Xiao Long Bao are made using a traditional fermentation technique, resulting in a delicate skin with a satisfying bite. The fillings are robustly flavoured with a numbing spicy pork. Other highlights include the succulent and spicy Ma La Xia (Sichuan-style Spicy Shrimp) and an assortment of crispy fried skewers, such as Lamb Intestines, Lamb Brisket, Beef, Squid Tentacles and Chicken Cartilage.

Cooling appetisers like Spicy and Sour Lotus Root, Spicy and Sour Chicken Feet, and Shredded Potato Salad also make for ideal summer starters. Heartier Sichuan-inspired mains, including Sour and Spicy Fish, Red-Braised Pork, and Chicken with Chili Peppers, round out the menu.

Bamboo Happy Hour and Signature Offerings

During the opening period, Bamboo is offering a Happy Hour promotion. Guests can enjoy a Buy-One-Get-One-Free deal on all cocktails from 5pm to 10pm daily. Additionally, diners arriving after 10pm in a party of four or more will receive a complimentary order of the signature Shengzhou Xiao Long Bao, subject to daily availability on a first-come, first-served basis.
