Summer Flavours at Spring Moon
During this season of bountiful produce, Chinese Cuisine Executive Chef Lam Yuk Ming and his culinary team at the Michelin-starred Cantonese restaurant Spring Moon have created a line-up of luscious new Cantonese dishes that incorporate the finest locally grown fruits and melons. Highlights include Braised South African abalone slices with young ginger, Chinese gooseberry and wampi sauce and Coddled Kagoshima beef fillet with white bitter melon, gingko and vegetables in broth.

Australian “Black Gold” at Gaddi’s
Summer in Hong Kong is wintertime in Australia – and that means the black truffle season is back in the Southern Hemisphere. Gaddi’s Chef de Cuisine Albin Gobil has sought out the best “black gold” from the Shire of Manjimup in southwest Australia, upon which to base his spectacular four-course (lunch only) and six-course Black Truffle Degustation Menus.
The masterful dishes from Chef Albin include Brittany scallop tartare with beetroot, Granny Smith apple, and borscht, Soft-cooked Mont Saint-Père egg with smoked mashed potatoes, black truffle cream, and parmesan foam, Line-caught French turbot with razor clams and celery, Milk-fed Limousin veal tenderloin with soufflé potatoes and sauce Périgourdine, 36-month aged Comté cheese with girolles and fresh almonds, and for dessert, Truffle and Laphroaig whisky ganache with pecan praline and 66% chocolate mousse. Renowned for its spectacular lakes and rivers, Switzerland produces magnificently fresh and tasty fish throughout the summer season. At Chesa, The Peninsula Hong Kong’s beloved Alpine Swiss chalet, Chef de Cuisine Lo Wing Keung has crafted a special Catch from the Lakes and Rivers 4-course menu inspired by traditional Swiss recipes. Swiss National Day Wine Dinner with Weinbau Ottiger at Chesa
In celebration of Swiss National Day on 1 August, Chesa at The Peninsula is joining hands with Weinbau Ottiger, one of central Switzerland’s major vineyards located in Kastanienbaum, Lucerne, to present a superb five-course dinner menu. The dishes have all been specially created to pair with the wine selections from vintner Toni Ottiger and his team. Mr Damien Fleury, Brand Ambassador of Swiss Wine and Founder of the Swiss Wine Store, will be a special guest at this celebratory dinner at which featured dishes include Butter-poached lobster with braised fennel and crustacean sauce and Roasted duck breast with confit potato, glazed baby carrots and juniper berry gravy. As a finale, dessert will be served with Bündner Röteli, a classic Swiss liqueur made from an ancient secret recipe by The Peninsula’s Group Executive Chef Florian Trento.

Winery of the Month
An ongoing and highly popular offering at The Peninsula Hong Kong is the hotel’s Winery of the Month programme, which features a specially curated wine list from a different international producer each month.

Since 2015, Weinbau Ottiger has become part of the prestigious “Mémoire des Vins Suisses,” representing the best wine producers from the country.
