New Cantonese restaurant, Uncle Su, is now open at The Star Gold Coast, marking the first in several new dining and entertainment destinations to welcome guests ahead of the inaugural hotel and apartments tower opening in early 2022.

Inspired by the cultural heritage and authentic Chinese family traditions of Executive Chef Song Yao Su, Uncle Su will offer an impressive rendition of classic Cantonese cuisine, created with local Australian ingredients and a coastal sensibility.

Drawing on Chef Song’s passion for letting the natural flavours of fresh ingredients shine, guests can expect to enjoy a delicious blend of Cantonese style favourites with a selection of signature Beijing and Szechuan dishes – each made with considered precision and the finest locally-sourced produce.

“Just as I grew up eating and cooking with my own family, my dishes at Uncle Su are uncomplicated and authentic, making the most of the amazing seafood and produce that Queensland has to offer,” Chef Song said. “Whether you’re relaxing in the lounge bar, gathering with loved ones in a booth or taking a seat at the kitchen counter, I’m so excited to be extending my family’s dinner table to friends, old and new.”

Chef Song’s signature Peking Duck, marinated in his own secret sauce for 24 hours before being roasted to perfection will be carved at the table, while clams served in Chef’s secret XO sauce are not to be missed. Diners can also look forward to a vast array of sensational live seafood displayed in tanks including locally-sourced lobster and crab, Queensland groper, barramundi, abalone and coral trout. And, for yum cha lovers, a specialty Dim Sum menu full of beloved classics like Char Siu Bao and Siu Mai will be handmade to order each day.

Tea will also be an integral part of the Uncle Su experience, with a dedicated tea connoisseur on hand to guide diners through the extensive menu and provide insight into the deep history, traditions and flavours of the tea. In addition to a wide variety of more common Chinese teas like Oolong or Jasmine, guests looking for a more premium experience will also be able to choose from a selection of rare Chinese teas sourced by Chef Song himself, some that cost up to $90 per pot. Each of these four premium teas will be served as part of a traditional Chinese tea ritual – also known as a ‘Kung Fu’ ritual – for a completely unique dining experience.

The juxtaposition of respected Chinese tradition and modern Australia that can be found in Chef Song’s menu echoes throughout the contemporary dining area, designed by award-winning local architecture and interior design practice, Plus Architecture. Featuring Chinese design elements and bespoke handcrafted materials like oversized lanterns, a golden money tree and beautiful koi fish motifs, all bathed in a sea of red, gold, cool ocean blue and jade green, the interiors add an element of vibrant energy to the space. Uncle Su also offers 5 private dining rooms seating up to 12 guests allowing for a more intimate and personal dining experience, and a semi private room that can be booked for functions up to 36 guests
