Signature outdoor terrace bar Songbird at The Ritz-Carlton, Perth has launched a new cocktail menu inspired by the beautiful birds that fill our skies.

The new cocktail menu showcases ten signature cocktails telling the story of a spirited bird, conveyed through a meticulous blend of the finest native ingredients that bring to life the playful nature of Australian birds.

The Songbird pays homage to the melodious call and elaborate tail feathers of the passerine bird, incorporating Belvedere plum and lemon myrtle tea infused vodka, Belsazar Rosé and Davidson plum popping pearls.

The Laughing Kookaburra brings to life the robust laugh of the Kookaburra with a lively blend of Bulleit Rye infused wattleseed whiskey, Lagavulin 16, Flor de Caña Spresso, Pedro Ximénez Sherry and cacao.

The bouncing acrobatic flight of the pink and grey cockatoo is captured in the Galah, made with Tanqueray quandong and anise myrtle tea infused gin, Giffard Crème de Pêche and raspberry.

The menu also features six non-alcoholic cocktails inspired by songbirds like the distinctive Western Whistler,

The Ritz-Carlton, Perth – Songbird – Crab Tostadas, Octopus Tempura and Glazed Lamb Ribs

recreated with a blend of Lyre’s Dry and Italian Orange with notes of peach shrub, strawberry gum and orange bitters. The bright red eyebrow of the Red-browed Finch comes alive in a mocktail incorporating Lyre’s Dry, lemon myrtle tincture and strawberry gum.

Alongside the cocktail menu, a new grazing menu of shared plates are served. The culinary delights incorporate international flavours and the very finest local ingredients from producers across Western Australia.

Guests can savour in Western Australian octopus tempura in traditional Japanese takoyaki, and locally sourced oysters with champagne mignonette, dill and apple snow. Other menu highlights include South-West charred smoked brisket sliders, and glazed Western Australian lamb ribs with dukkah and native saline greens.

Hotel guests and locals alike can delight in the open skies and breathtaking views over the Swan River and Perth skyline for Sunset Hour, whilst they sip on an exclusive seasonal cocktail for the hour. As the golden sky transitions into night, the outdoor fire pit is ignited to signal the end of Sunset Hour and create a warm ambiance for guests to experience the menu late into the evening.
