Contemporary urban izakaya & lounge Kacho Fugetsu has opened at CUBUS in Causeway Bay. The new dual-concept venue is inspired by Japanese aesthetics in striking modernist style, spanning 5,300 sq ft over two split-levels twinning creative, premium izakaya fare above a sophisticated, theatrical speakeasy lounge.

Launched by dynamic hospitality specialist ZENG Group (www.zenghk.com), Kacho Fugetsu is named after the Japanese philosophy of personal discovery from appreciating both beauty and imperfection of nature – with interior design embracing ‘wabi-sabi’ aesthetics of asymmetry, roughness, simplicity and natural objects.

The ‘urban izakaya’ at the 25/F entrance is styled in the socialising spirit of Tokyo’s iconic rendezvous, but in the futuristic zen-like style of today’s fashionable new generation – a stunning contrast of black floor and ceiling nestling brilliant white décor and furnishing, anchored by an open kitchen.

cAs with design, the creative, contemporary izakaya menu is anything but traditional – from premium jet-fresh sushi and sashimi to inspired cold and hot appetisers, smoky ‘kushiyaki’ grilled meat, seafood and vegetable specialties, Japanese-style tapas, hot favourites such as tempura and ‘kamameshi’ kettle rice and classic desserts.

A menu signature is the ‘Osusume’ counter of freshest available seafood delivered jet-fresh daily, recommended by the chef not only for selection but also by style of cooking.

Signature dishes include Toro Trio (HK$288) of toro sashimi, tempura seaweed-wrapped negitoro & grilled tuna jaw, Wagyu Beef Tataki (HK$218) of prized hose specialty Kagoshima A4 Waygu, and Kacho Fugetsu Roll (HK$348), a decadent symphony of Kagoshima A4 Waygu, uni, snow crab and caviar.

Kushiyaki skewer specialties include Homemade Tsukune (HK$48), Tiger Prawn Wrapped with Chicken Skin (HK$98), Miyazaki Sausage (HK$58) and Tokushima-Ken Awaodori Chicken Wing (HK$48), with chicken specialties from premium Kagoshima Red Satsuma chicken.

Among robatayaki options highlights are succulent Hokkaido Yongenton Pork Belly (HK$118); Grilled Snow Crab Leg (HK$398) and Live Conch (HK$198), with signature specialties also featuring Foie Gras & Shiro Unagi Pot Rice (HK$198) and Pan-fried Crispy Skin Amadai (HK$188).

For a memorable one-of-a-kind feast, a choice of two thematic ‘omakase’ chef’s choice menus can also be tailored on request, with reservation at least two days in advance. Exceptionally different from others, the Kacho Fugetsu Omakase Menu (HK$888) embraces the best of convivial ‘izakaya spirit’, including specialities such as kushiyaki (skewers), yakimono (grills) and signature kamameshi (kettle rice), while the Sushi Omakase Menu (HK$1,288) is an exquisite omakase experience of jet-fresh sushi and sashimi.

Lunch options include seafood donburi sets such as Salmon, Seasonal Fish, Sweet Prawn and Scallop (HK$198) and teishoku meat sets of Kagoshima A4 Wagyu Sirloin (HK$388), Robatayaki Australia Wagyu Beef Flank (HK$208) and Robatayaki Hokkaido Shigenbuta Miso Pork Belly (HK$148), all including cold dish, soup and chawanmushi (Japanese savoury egg). For an extra HK$15-HK38, guests can also add extra sashimi, snacks, desserts or drinks.

In contrasting style and mood, the 23/F lounge is accessed like a hidden chamber down through stairs and a corridor into a darkly theatrical speak-easy.

This raw yet sophisticated ambience is the backdrop to mixologists creating cocktail wonders from all-time classics to signature elixirs embracing the brand’s Kacho Fugetsu DNA.  Along with a menu of Japanese canapés, an extensive sake list of around 30 labels is also handpicked by the in-house sommelier, from well-known brands to hidden gems of niche producers worth discovering.

Exotic, elegant cocktails include a selection with mesmerising molecular bubbles, including Grace (HK$128), an elegant gin-based cocktail with a rosy aroma and taste from italicus, rose syrup and lemon juice, and Smokey Tea (HK$148), a stunning showpiece with smoked apple wood creating the effect in a strong whisky cocktail with Earl Grey tea, apple juice and lemon juice.

Chosen especially to appeal to various preferences, from feminine and floral to mature and sophisticated, crispy and refreshing, and rich complex, signature sake brands include Tsukimizunoike Ginjo, Toyo No Aki Karakuchi GinjoShonosato Junmai Daiginjo Shizukuzake and Tenkuro (Chardonnay Barrel from O Winery to Asamai Brewery) Taru Junmai.

Also outstanding is the multi award-winning ‘Zaku’ collection, from one of the highest-valued sake cellars in the world. Founded in 1869, the brewery with a commitment to local rice and water, small-scale batch brewing and dedication to aromatic craft sake that matches with a variety of modern cuisines has earned a legion of fans, including football player Hidetoshi Nakata. Among its noble sakes at Kacho Fugetsu are raw, fresh Zaku IMPRESSION M, Zaku Isenonami Junmai Daiginjo, silky and elegant Zaku Kaizan Ittekisui Junmai Daiginjo, most popular label, soft and refreshing Zaku Megumi no Tomo Junmai Ginjo, and international award winners Zaku Miyabi No Tomo Nakadori Junmai Daiginjo, and Zaku Kanade no Tomo Junmai Ginjo.

Guests making a dining reservation are invited to enjoy premium dishes at special price, including Kagoshima A4 Wagyu (HK$128), Hokkaido Baifun Uni (HK$298), Taraba Crab (HK$298), Senposhi Oyster (HK$88/2pcs), Bay Lobster (HK$228) and Kinki (HK$398); and lunch reservations for at least two through Openrice also receive a 10% discount.

At the lounge, a special offer from Sunday to Thursday is also on signature cocktails, with a 50% discount all night on ordering the second one.
