Contemporary urban izakaya & cocktail lounge Kacho Fugetsu is opening at CUBUS in Causeway Bay in mid-November 2021. The new dual-concept venue is inspired by Japanese aesthetics in striking modernist style, spanning 5,300 sq ft over two split-levels twinning creative, premium izakaya fare above a sophisticated, theatrical speakeasy.

Launched by dynamic hospitality specialist ZENG Group (www.zenghk.com), Kacho Fugetsu is named after the Japanese philosophy of personal discovery from appreciating both beauty and imperfection of nature – with interior design embracing ‘wabi-sabi’ aesthetics of asymmetry, roughness, simplicity and natural objects.

The ‘urban izakaya’ at the 25/F entrance is styled in the socialising spirit of Tokyo’s iconic rendezvous, but in the futuristic zen-like style of today’s fashionable new generation – a stunning contrast of black floor and ceiling nestling brilliant white décor and furnishing, anchored by an open kitchen.

As with design, the creative, contemporary izakaya menu is anything but traditional – from premium jet-fresh sushi and sashimi to inspired cold and hot appetisers, smoky ‘kushiyaki’ grilled vegetable, meat and seafood specialties, Japanese-style tapas, hot favourites such as tempura and ‘kamameshi’ kettle rice and classic new wave desserts.

A menu signature is the ‘Osusume’ counter of freshest available seafood delivered jet-fresh daily, recommended by the chef not only for selection but also by style of cooking.

Eclectic signature dishes include Matsuba Crab Roll with Sea Urchin Topped with CaviarSteamed Wild-Caught Tasmanian Abalone with SakePan-Seared Amadai with Sweet Corn SauceAbalone Isoyaki with Caviar and Homemade Soy SauceSteamed Hand-Caught Bay Lobster with Homemade Spicy SauceToro Trio – Prime Tatty Tuna Sashimi, Seaweed Wrapped Fatty Tuna and Leek Tempura Grilled Tuna Jaw, and Japanese Pot Rice with Foie Gras and Eel.

For a memorable or one-of-a-kind feast, a thematic ‘omakase’ chef’s choice menu can also be tailored on request in an intimate private room seating up to eight guests.

Enhancing the dining experience are fascinating design talking points – Japanese landscapes referenced by the stark contrast of grey and white; ‘washi’ paper ink artworks of mountain and forest scenery, inspired by the renowned Lake Yamanaka – the largest of the ‘Fuji Five Lakes’, which is rich in flora and fauna coherent with the brand’s name in Chinese characters, representing ‘flower, bird, wind and moon’.  To support the Hong Kong art community, one eye-catching feature wall embracing the aesthetic of ‘wabi-sabi’ was especially commissioned from a talented local designer.

In contrasting style and mood, the 23/F cocktail lounge is accessed like a hidden chamber down through stairs and a corridor into a darkly theatrical speak-easy.

Design of the subdued, seductive and welcoming sanctuary playfully offsets slick metal and plush flannel lounge seating with rough stone, pre-existing industrial features and exposed structural details – beneath a ceiling of decorative lighting twinkling like a starry night.  Another feature wall is also commissioned locally in support of the art community.

This raw yet sophisticated ambience is the backdrop to mixologists creating cocktail wonders from all-time classics to signature elixirs embracing the brand’s Kacho Fugetsu DNA.  Along with a menu of Japanese canapés, an extensive sake list of around 30 labels is also handpicked by the in-house sommelier, from well-known brands to hidden gems of niche producers worth discovering, along with an exotic array of cocktail selections.

Chosen especially to appeal to various preferences, from feminine and floral to mature and sophisticated, crispy and refreshing, and rich complex, signature sake brands include Tsukimizunoike Ginjo, Toyo No Aki Karakuchi GinjoShonosato Junmai Daiginjo Shizukuzake and Tenkuro (Chardonnay Barrel from O Winery to Asamai Brewery) Taru Junmai.  Handpicked Japanese gin, vodka and whiskey also include Komasa Sakurajima Komikan Gin, award winning Ki No Tea Kyoto Dry GinFujimi Handcraft Vodka and Fujimi The 7 Virtues Blended Japanese Whisky.

Opens daily from 12 noon – 3 pm; 6 pm – 11 pm (Restaurant); 5 pm – 2 am (Lounge), Kacho Fugetsu spans 5,300 sq ft over two split-levels of Cubus at 1 Hoi Ping Road, Causeway Bay, Hong Kong.  The 25/F ‘urban izakaya’ seats 40, with private room for up to 8 guests, with the 23/F cocktail lounge seating 60, also with a private room for up to 12.
