Cape Byron Distillery, home of the highly awarded Brookie’s Gin, has served up some wintery cocktails with a little ‘Gin’ Ne Sais Quoi this World Gin Day. Held on Saturday 12th June, it is a global celebration of this tasty spirit in all its forms and flavours – and what better way to celebrate, than to explore gins made from the most unique and truly Australian botanicals.

Set amongst the lush rainforest of the Byron Bay hinterland, Cape Byron Distillery keeps true to the art of distillation while creating spirits that capture and showcase flavours distinctive to their area.

If you’re looking for a beautiful Australian interpretation of a classic London Dry Gin, their Brookie’s Byron Dry Gin is created with 25 botanicals, 17 indigenous to the Northern Rivers.

Their Brookie’s Slow Gin is made using their Northern Rivers indigenous Davidson Plums instead of ‘Sloe’ berries, making it a one-of-a-kind spirit, with exhilarating flavours of rose, watermelon and plum. You can serve this sipper over ice with a splash of soda or ‘Take It Slow’ with 1part Slow Gin, 1 part tonic, 1 part soda and sliced strawberries & mint.

Alternatively, if you’re looking for an uplifting tipple that celebrates in-season fruits, then be sure to try Brookie’s Shirl the Pearl, which heroes local cumquats. CUPPA SHIRL

Ingredients

45 mL Shirl the Pearl by Brookie’s
30 mL Lemon juice
15 mL Honey Syrup
60 mL Hot water
Burnt Orange Wheel to Garnish

Method
Combine all ingredients in a cup and stir, and garnish.

Drinking Instructions
Best served in a teacup, and perfectly paired with a blanket, fluffy socks and book.

CASSIA NOVA

Ingredients
50 ml Brookie’s Byron Dry Gin
15 ml Toasted green apple & Cassia Bark Syrup
2 dashes Angostura Bitters
Dehydrated cinnamon glazed apple wheel – to garnish

Method
Combine all ingredients in a cup. Stir & strain into glass and garnish.

Drinking Instructions

Best served in a Nick & Nora glass whilst you stare longingly out a window watching the rain.

MULLED SLOW

Ingredients

50ml Brookie’s Slow Gin
50ml Cloudy Apple Juice
50ml Water
1x Teaspoon Honey
1/2 Cinnamon Stick
2x Cardamom Pods
1/2x Teaspoon Ground Ginger
1x Orange Zest
1/2x Vanilla Pod

Method

Add all ingredients (except Slow Gin) to pan. Medium heat till boiling then reduce & simmer down for 15 mins. Add Slow Gin & strain into cup. Garnish with Orange Zest. Recipe for one serve/cup but we recommend cooking larger volumes to store in the fridge & enjoy as needed.
Drinking Instructions

Best served in a Teacup, for those cold nights in at home.
