From Australia to Japan, South Korea and Malaysia, AC Hotels is dedicated to the details that matter most to guests during their travels with a mission to deliver The ‘Perfectly Precise’ Hotel™ experience.

Blending refined simplicity with a modern sensibility, the refreshed menu includes signature gin and tonic creations, timeless classics reimagined with contemporary flair and also features destination-inspired cocktails with an exclusive collaboration with award-winning Asian-Australian mixologist Millie Tang.

With nearly two decades of global bartending experience, Millie has a multi-faceted approach to cocktail creation, drawing from her mixed heritage, creative background and extensive travels. Twice awarded as Bartender of the Year in Australia and a recipient of multiple awards and accolades from international competitions, she brings her distinctive perspective and contemporary edge to AC Hotels’ innovative drinks collection. The result is a set of cocktails inspired by the diverse APEC cities where AC Hotels are present – local yet international, thoughtfully crafted to deliver an elevated drinking experience that balances precision with bold flavor.

Drawing on AC Hotels’ European roots and love for effortless hospitality, the new beverage collection blends elegance with flavor. Each cocktail is thoughtfully crafted – balancing clean, modern design with vibrant local ingredients – to create drinks that feel as refined as they taste.

The newly curated cocktails will be offered at the AC Lounge across AC Hotels in APEC, where the experience extends beyond the glass. These modern, social hubs invite guests to unwind over small plates and thoughtfully prepared drinks that reflect both local influences and the brand’s European heritage.

  2. The Signature ‘ACGT’ Gin & Tonic: The APEC edition of the Signature ‘ACGT’ features a delicate blend of cherry blossom gin and lemongrass & ginger tonic. 
  3. Harmonia: Bright, elegant, and approachable creations. Fruits, flowers, and soft botanicals that create a calm yet vibrant profile. 
  4. Modern: Classic cocktails with a contemporary twist, featuring minimalist presentations that let each flavor shine. 
  5. Discerning: Sophisticated and nuanced cocktails, designed for the curious palate seeking depth and innovation. 
  6. 0% ABV Collection: The new 0% ABV (Alcohol By Volume) collection that offers bespoke non-alcoholic cocktails crafted exclusively for the APEC region, ensuring all guests can indulge in the artistry of AC’s mixology.

Locally Inspired Cocktails by Millie Tang 

Drawing from her travels across cities such as Melbourne, Seoul, Tokyo, Manila and Kuala Lumpur, Millie has crafted a cocktail collection that reflects the character and spirit of each destination. Notably, the ingredients selected by Millie are rooted in local culture and flavors – from Filipino ube and Malaysian pandan, to Japanese yuzu and Korean soju – culminating in cocktails that tell the story of its home while still offering a modern, approachable take on classic recipes. Hero serves from this collaboration with Millie include Melbourne’s tea-inspired High Tea Highball, Manila’s Ube Sour, and Seoul’s Soju Martini.

“I wanted every cocktail to tell the story of its city, infusing local ingredients so guests can savor flavors they might not have discovered before, that yet taste familiar,” said Millie. “Collaborating with AC Hotels has been an inspiring journey, creating drinks that capture the essence of each destination with refined simplicity in true AC style.”

The Signature ‘ACGT’ Gin & Tonic  

The Signature ‘ACGT’ Gin & Tonic remains one of the centerpieces of the refreshed menu, embodying the balance, simplicity, and precision that has long defined the AC Hotels experience. The APEC edition of the AC Signature G&T features a delicate blend of cherry blossom gin and lemongrass & ginger tonic.

The Gin & Tonic is deeply rooted in AC Hotels’ European heritage and has become a signature of the brand. More than just a cocktail, the ‘ACGT’ has established the brand as a hub for Gin & Tonics and become a symbol of the brand’s elegance, understated sophistication, and commitment to exceptional hospitality.

Extending this tradition across the region, the menu introduces APEC-inspired Gin & Tonic creations, infused with flavors that celebrate local cultures, landscapes, and botanicals. From the delicate floral notes of cherry blossom to the zesty brightness of lemongrass and the gentle warmth of ginger, each cocktail offers a modern, approachable take on a classic cocktail.
