Spread the love

There are dinner parties, then dinner parties that make you regret every other meal you’ve eaten that month. On Friday, 18 October 2025, Fusion Resort & Villas Da Nang will host such an occasion. They’ve called it Legendary Ladies, and while marketing hyperbole often promises more than it delivers, in this case, the title might be underselling it.

It’s a gathering of six women who don’t just work in Vietnam’s culinary and beverage industry; they’ve bent it to their will. If the country’s hospitality scene were a grand stage, these are the headliners, the crowd-pullers whose names spark both admiration and mild professional envy.

And in true Da Nang style, the whole thing is timed just ahead of Vietnamese Women’s Day — an occasion that, if you ask the organisers, should be celebrated with six courses, three cocktails, and a wine list designed to make your heart beat faster.

The Grand Master of the Shaker

First up, the bar. Forget watery mojitos and fluorescent martinis, Legendary Ladies has Kata Simon, and she’s not here to play safe. With 23 years of “bar life” under her belt, Kata’s less a bartender, more a liquid alchemist. She founded the Key Bar & Tender Academy, a Campari 100th-Year Negroni Week winner. She has a flair for folding bold, exotic ingredients into drinks that taste like an adventure and a homecoming.

She doesn’t just mix cocktails; she choreographs them. Expect garnishes that make sense only when you taste the drink, ice cut with the precision of a diamond, and perhaps a faint sense of loss when the glass is empty.

The Wine Whisperer

If cocktails are the opening act, Myriam Moretto is the evening’s maestro. She’s worked in Michelin-starred dining rooms from Monaco to Hong Kong, poured vintages for the world’s most discerning palates, and now co-owns Le Comptoir and La Table Hoi An.

Myriam has that rare sommelier’s gift: the ability to recommend a wine without making you feel like you’ve failed a pop quiz on Burgundy appellations. She’ll guide the night’s six-course feast with precise pairings that make you wonder why you ever trusted your judgment in bottle shops.

Four Chefs, Four Stories

This is where the real fireworks happen.

Chef Hàn Ni – From commis to sous chef at Michelin-recognised Esta Saigon, Hàn Ni has earned her place in the kitchen hierarchy the hard way: with long hours, blistering heat, and a refusal to compromise on quality. Her fire-cooked dishes are a love letter to local ingredients and tradition, plated with the elegance of a Paris gallery opening.

Chef Tuyet PhamMasterChef Vietnam runner-up, founder of NU ĐỒ Kitchen, and proud Quang Nam native has spent nearly a decade building her brand. Her food tells stories, sometimes nostalgic, sometimes rebellious, but always confident.

Chef Nguyen Ngo – The quiet force behind Le Comptoir, Nguyen is the sort of chef every kitchen dreams of: versatile, unflappable, and consistently excellent. She’s as comfortable crafting delicate amuse-bouches as she is commanding the grill.

Chef Tin Ho – A culinary ambassador in the truest sense, Tin Ho has cooked in the Philippines, India, and Thailand, introducing Vietnamese flavours to eager audiences. She’s also mentored countless students at Á Âu school, passing on kitchen wisdom that never makes it into textbooks.

The Menu: A Love Letter to the Senses

The evening begins with a three-course canapé reception, each bite matched to one of Kata’s creations. This is not, as some might fear, a ploy to keep guests occupied while the chefs get their ducks in a row. It’s a statement of intent: you’re here to be surprised, delighted, and slightly challenged if the bartending gods smile.

Then comes the main event: a six-course dinner. Each chef will contribute dishes that bear her signature, from the grill’s heat to the finesse of hand-folded pastry. Myriam’s wines will not merely accompany these plates; they’ll converse with them, each sip an answer to a question you didn’t know you’d asked.

A Night to Book, Not Just Bookmark

This isn’t the kind of dinner you stumble into at USD 117 (VND 2,950,000 nett) per person. It’s a date you circle in the calendar and, if you’re wise, secure before the city’s food lovers snap up every available seat.

More than that, Legendary Ladies reminds us that Vietnam’s hospitality industry is no longer a boys’ club. These women aren’t just participating, they’re leading, mentoring, and shaping the country’s food and beverage identity. In one evening, they’ll share not just their craft but their conviction that talent knows no gender.
