chef Alain Ducasse at the Michelin three-starred Le Louis XV at the Hôtel de Paris Monte-Carlo. Today, he helms the Michelin one-starred Lazzaro 1915 in Pontelongo, Italy.

Chef Piergiorgio will craft a series of special dishes during his five-day residency at Cucina. Among the highlights is the hamachi, almond milk mayonnaise, lemon, and seaweed. This simple yet delicate appetiser features fresh yellowtail with velvety almond milk mayonnaise, zesty lemon, and seaweed for depth. Another star dish is the baked pasta with mollusk and crustacean, rocket and wine reduction sauce, prawn powder – an innovative and delightful dish that celebrates the bountiful flavours of the sea.

pluma, mussels, red onions, Italian green sauce. The tender pork is beautifully complemented by the succulent mussels while the red onions and green sauce add a touch of sweetness and freshness.

Guests can complete the exquisite meal with Chef Piergiorgio’s decadent desserts, such as the sweet and tangy candied strawberry and rhubarb with vinegar and red radish, milk ice cream or the vegetarian tiramisu with pumpkin and ginger Ice cream, sweet potatoes foamporcini caramel which offers an innovative take on an Italian classic.

Chef Piergiorgio’s signature dishes will be served at Cucina from 7 to 11 May. A four-course tasting dinner priced at HK$888 per person will be available alongside an à la carte menu during lunch and dinner periods. Guests are invited to experience Chef Piergiorgio’s Italian masterpieces served alongside stunning views of Victoria Harbour.
