Laissez-faire Catering partners with The Calyx at Royal Botanic Garden Sydney launching new rainforest exhibition wall to 400 event buyersLaissez-faire Catering, in partnership with The Calyx at the Royal Botanic Garden Sydney, has brought to life Alchemy of a Rainforest – an immersive rainforest experience featuring a glowing cocoon canopy, rare rainforest flora, and the largest green wall in the Southern Hemisphere with a VIP launch to over 400 industry professionals.

As the exclusive in-house caterer for The Calyx, Laissez-faire Catering delivered an exquisite menu inspired by the rainforest’s vibrant colours and textures including everything from creative cocktails to decadent canapés. Laissez-faire showcased its dedication to sustainability by using locally sourced ingredients, aligning perfectly with the exhibition’s eco-conscious theme.

Alchemy of a Rainforest provided the perfect inspiration for our menu, allowing us to draw upon the rainforest’s rich tapestry of flavours, colours, and natural beauty. We designed the event to be an inspiration for what the planners could do to bring their events to life.

“The new exhibition gives the space an entirely different feel, and paired with the sustainability principles weaved through the exhibition and menu choices, the possibilities for creating meaningful and memorable events are limitless,” said Flaksbard.

Sustainability at the heart of the menu
The launch event featured a menu deeply connected to the rainforest theme, highlighting Laissez-faire’s commitment to sustainable catering practices and supporting the Earth’s oldest ecosystem.
Sustainable produce suppliers and local businesses were key partners, reducing the carbon footprint from plant to plate.
“We’re passionate about offering menus that reflect the cultural, natural, and artistic aspects of The Calyx, whether through sustainable produce or partnering with Indigenous suppliers to create recipes and bring flavours to life,” said Flaksbard.
Among the memorable dishes were canapés like Gin & Sage Salt Cured Lamb with White Pepper Yam and Black Sesame Seared Ahi Tuna on a Wonton Crisp, along with vegan-friendly options like Roasted Eggplant & Tahini Panna Cotta with Toasted Macadamia. The star of the dessert experience was a chocolate bar inspired by rainforest earth tones, featuring Australian dark almond splinters, passionfruit truffles, and roasted coffee truffles.

Laissez-faire collaborated with Simply Seated for the elegant styling of the venue and tableware, serving signature cocktails like the Limoncello Strawberry Fizz and the classic Penicillin in refined martini glasses that added an extra touch of sophistication to the event.
