Capturing the easy-going, sun-drenched rhythms of life on the coast, Aman unveils its latest dining concept Nura. Launching with locations on the shores of Korakia Beach at Amanzoe, Greece, and the golden sands of Amanpuri, Thailand, Nura is Aman’s tribute to the vibrance and variety of Mediterranean cuisine and culture. Bringing a relaxed, beachside ambience to dining, Nura joins existing global restaurant concepts Arva, a homage to Italy’s cuisine, and Nama, a celebration of Japanese washoku cooking. In line with Aman’s culinary ethos, Nura is similarly focused on the provenance of ingredients and the appreciation of gastronomic tradition.
Served against a backdrop of live music and laid-back beats, which mirror the natural beauty of each location and the rhythmic thrum of the surrounding waves, Nura’s menu showcases the art of grilling, alongside delicate tapas, crudos, salads and pizzettes. Sharing is at the heart of the experience and signature dishes include a yellowtail tiradito with citrus dressing, Manchego and black truffle croquettes, as well as charcoal-fired meats and freshly caught seafood, such as local seabass and whole spiny lobster. A selection of seasonal sorbet and ice cream, as well as a Basque cheesecake, are among the dessert offerings, complemented by refreshing cocktails, chilled wines, and iced teas, all befitting an afternoon of beachfront dining. Nura is open for lunch and dinner at Amanzoe and lunch only at Amanpuri.

Mixology Masterclass at Aman New York, North America
From Tuesday to Thursday, Aman New York presents a new mixology masterclass, held behind the bar at The Jazz Club, a classic New York speakeasy reimagined by Aman. Hosted by expert mixologist Ryan Gavin, the 45-minute session delves into the history of cocktails, muddling, making garnishes and mixing techniques, and includes a selection of small plates to enjoy alongside the aperitifs. The masterclass offers a behind-the-scenes insight into The Jazz Club’s house-made ingredients, such as toasted coconut-infused rum and hopped pineapple soda which are used in bespoke cocktail, Nera, named after Aman’s Dominican Republic resort, Amanera.
Historically Inspired Cocktails at Aman Venice
Aman Venice has launched a new signature cocktail list Riflessioni, meaning reflections, that pays homage to the place it calls home – Palazzo Papadopoli, one of the eight monumental palaces of the city. Award-winning mixologist Antonio Ferrara collaborated with a local historian to weave the palace’s heritage into the six new cocktails, each representing a different room of the palazzo. Amongst them is Armonia, a modern Rum Sour made with Rum Santa Teresa 1796, grapefruit, and cinnamon cordial, which creates a symphony of flavors reflecting the muses depicted in The Red Room’s original frescoes. Meanwhile, Devozione is a tequila-based proposal gently infused with strawberry and apricot and served in an elegant coupe adorned with strawberry powder, which speaks to the timelessness of the Tiepolo Room.
Oysters in the Forest at Aman Tokyo, Japan
Available until 31 August, Aman Tokyo offers an exclusive menu of fresh seafood dishes complemented by wine and champagne, served in the forested surrounds of The Café. From deep-water oysters to shrimp cocktail and bouillabaisse, dishes pair perfectly with the lush green environment – ideal for sharing on a summer’s afternoon.
Guest Chefs and Mid-Autumn Festival at Amanoi, Vietnam
Through 31 August, Amanoi welcomes two esteemed guest chefs to further elevate its culinary offering. With over 15 years’ experience in Michelin-starred restaurants, Chef de cuisine Simone Balini from Aman Le Mélézin, France, presents Italian and Mediterranean dinners at the Beach Club on select Fridays. Meanwhile, with two decades of knowledge, including a tenure at Joël Robuchon in Paris, pastry chef William Miroslaw conducts pastry workshops and cooking classes at the Rock Studio twice a month.
Later in the year, Amanoi’s calendar of culinary events continues with Mid-Autumn Festival celebrations. From 14-18 September, the programme features daily interactive sessions including Vietnamese coffee and chocolate tasting, mocktail making and a Vietnamese spring roll cooking class. Each evening, Amanoi will present one-off dining experiences ranging from a Surf and Turf Barbeque Dinner and Market-Style Buffet to a Sacred Cham Dinner inspired by local tradition.
Kunming Lake Cruise Breakfast at Aman Summer Palace, China
Until 20 October, Aman Summer Palace welcomes the day ahead with a serene breakfast experience on the Kunming Lake. As dawn breaks, a nourishing feast is served onboard a private dragon boat, which drifts peacefully across the water, offering views of the distant mountains.
Tea House Afternoon Tea at Amandayan, China
Available until mid-October, indulge in an exquisite afternoon tea at Amandayan’s own Tea House, overlooking Lijiang Old Town. Crafted from local ingredients such as smoked salmon and Yunnan black tea, sweet and savoury dishes range from black truffle with shrimp and mushroom dumplings to dill flower Dayan Earl Grey tiramisu and freshly baked cranberry scones with mascarpone.
Dining in Nature at Aman-i-Khás, India
Aman-i-Khás presents three new culinary experiences for the season ahead, designed to celebrate its natural surrounds. Available from October, a new dining experience in the wild of Ranthambore National Park will be hosted high above the forest floor in a hand-built wood-clad Machan – a raised platform in the trees traditionally used to observe wildlife. Ideal for a romantic evening under the treetops, a curated menu of farm-to-plate dishes, using vegetables grown in the resort’s organic garden, include Rajasthani classics jungli maas and laal maas served alongside the rhythmic symphony of the forest and wildlife below.
In addition, a new intimate dining experience will be offered in a secluded forest location at the camp. Listen to the sounds of nature while dining on a menu comprising fresh soup, assorted tandoor-grilled meats and traditional Indian dishes including naan bread prepared in a tandoor oven. Also new, a cooking class in the camp’s farm hut will be led by Aman-i-Khás’ chef, with guests invited to explore the camp’s organic garden, select fresh produce and join the chef in creating a unique lunch.
Gwaadi and Dining Under the Stars at Amanbagh, India
This September, Amanbagh will unveil its new Gwaadi, an outdoor kitchen situated in the resort’s own guava farm. Accommodating up to six guests, the Gwaadi will host intimate, hands-on culinary experiences and cooking classes using fresh ingredients handpicked from the adjacent farm.
Also new for autumn, dine under the stars and amid a canopy of soft fabrics and fragrant flowers, while a private chef serves a menu inspired by the rich flavours of North India – perfect for those celebrating a special occasion.
35th Anniversary Celebrations at Amandari, Indonesia
Ahead of Amandari’s 35th anniversary this October, the resort is hosting a series of Purnama (Full Moon) feasts each month in the lead up to the celebrations. Featuring welcome drinks, canapés and traditional Ngejot menu, with live entertainment including gamelan music and dancing.
In further celebration, Amandari is proud to announce new partnerships with Karusotju, Bali’s premier spirit company, and The Talasi, a Mount Batukaru coffee plantation. Exclusively for the anniversary, Amandari will offer limited-edition bottles of bespoke Karu 35 premium arak – a traditional sweet potato spirit fermented using Japanese (shochu) and Korean (soju) techniques. Each bottle will feature a custom Balinese illustration and be available at Amandari’s boutique in October. Also debuting in the same month, the Talasi X Amandari partnership will enhance the resort’s coffee offering with three unique Balinese coffee varieties included in Amandari’s minibar.
The Arrival of Arva and Karangasem Royal Dinner at Amankila, Indonesia
Amankila on Bali’s east coast is set to host exciting culinary events celebrating the arrival of Aman’s Italian restaurant, Arva. Already renowned across the globe, from New York to Venice and Tokyo, Arva brings its cucina del raccolto (‘harvest cuisine’) to Amankila for the first time, refreshing the poolside Terrace with a new dining destination offering picturesque sea views.
Adding further lustre to Amankila’s culinary scene, a new dining experience is available at Ujung Water Palace from August. Built in 1901 and fully restored in 2000, this gracious estate was the architectural inspiration for the resort. Available after gates to the public close at 5pm, exclusively for guests of Amankila, the Karangasem Royal Dinner begins with sunset drinks and canapés followed by a private guided palace tour. A multi-course dinner of royally inspired Balinese dishes at the palace’s highest point follows, with stunning views of the grounds and surrounding landscape.
