Hyatt Regency Brisbane’s signature restaurant, Lennons Restaurant & Bar is proud to launch their new winter menu this May, featuring heartwarming winter classics designed with a focus on local produce and sustainability.
Executive Chef Krisztian has sourced barramundi from Moreton Bay, duck from Toowoomba and crab from Deception Bay, as well as an array of fruit and vegetables from farms around Queensland, making the new winter menu 90% locally sourced from Queensland farmers.
“Winter is my favourite time of year for seasonal produce. Complimented by using rich sauces and slow-cooked styles; I love to work with incredible flavours such as beetroot, and rhubarb along with our local farmers for all key proteins and seafoods. We are truly blessed in this state to be able to source such fresh and premium produce close by,” said Executive Chef Krisztian.
Sustainability is a key focus for Lennons Restaurant & Bar, with a curated menu that aims to decrease waste by 20%.
“A highlight this winter is the Braised Five Founders Short Rib, a true delight. Guided by our Hyatt purpose of care and increased efforts in sustainability, we are excited to partner with like-minded, local Five Founders Farm, known for their regenerative and sustainable approach to farming which is most important to us and our guests” says Chef Krisztian.
Guests can expect to be delighted by a menu with classic winter warmers such as Roasted Pumpkin and Coconut Soup, a Rump of Lamb with lashings of fresh mint jelly, Moreton Bay Barramundi, and a Honey-Chili Glazed Duck Breast, to name a few.
Save room for a truly special winter dessert with the introduction of Chef Krisztian’s Wattle Seed Sour Cream Chocolate Cake, served at the table from a large family style bowl that will ensure instagramable moments.
