Executive Chef Sam Moore, has shaken things up at Champagne Bar at the Sofitel Darling Harbour, with a new Spring menu that is based on exquisitely prepared small share plates, utilising the fresh tastes and produce of the season.

“The views of the city skyline, an atmosphere of chic sophistication, and a reputation as the unofficial home of Champagne in Sydney, called for a new menu to complement both the venue and the season,” explained Moore.  “Each dish of course pairs beautifully with champagne, and brings a new world of flavours to the Sydney bar offering”.

Champagne Bar’s new menu includes a Spanner Crab Crumpet with fermented chilli, chive and bottargoScallops grilled over Coals with a bonito emulsion and lemon herb crumble; and a Lobster Roll on toasted brioche.

Cocktails play an equally important role alongside the Champagne offering with new selections expertly crafted by a talented team of bartenders and including Sweet WilliamRosemary infused Tanqueray gin, Poire William pear liqueur, lemon, Perrier-Jouët; or The BotanistPandan infused Botanist gin, Italicus, Amaro Nonino, coconut, lemon, walnut, egg white.

Champagne Bar is open Monday – Thursday & Sunday: Open from 5:00pm – 11:00pm

Friday & Saturday: Open from 3:00pm – 12.00am.

Champagne Hour, available every Monday – Thursday from 5pm to 7pm
