The St. Regis Bangkok reveals the latest guest chef session featuring Cheung Chin Choi, Executive Chinese Chef of Fei Ya at Renaissance Bangkok Ratchaprasong Hotel.

Chef Choi will be showcasing classical Chinese culinary techniques, dim sum and other authentic Cantonese specialties at the Exquisite Sunday Brunch on Sunday, 29th May 2022 at VIU Restaurant.

For one day only, Chef Choi will present a pop-up menu which includes Peking Duck, Fei Ya’s signature dish which sees duck roasted over a special lychee wood and served in expertly sliced thin pieces, accompanied by the aromatic wok-fried Duck Meat with Black Pepper Sauce.

Also on the menu are classic seafood favorites including delicate Jellyfish served with shredded cucumber and chili sesame sauce, King Prawn in X.O. Sauce, as well as a spicy and sour Teo Chew-style Wonton.

In addition to the special pop-up menu, the weekly Exquisite Sunday Brunch features an extensive selection of premium dishes, including all-you-can-eat Alaska king crab, Wagyu beef with truffle sauce, sea urchin (uni) pasta, a smorgasbord of Western and Asian food selections, artisan goat cheese, cold cuts including Parma ham and chorizo, a dessert corner with handcrafted pastries and a Belgium chocolate fountain.

Prior to Fei Ya, Chef Choi has created sumptuous dim sum and Cantonese menus around the world including in Shanghai, Hong Kong, Phnom Penh, Chengdu, Bali, Perth, Saudi Arabia and United Arab Emirates.
