The acclaimed Grand Brasserie of Waldorf Astoria Shanghai on the Bund introduces the elevated all-new menus themed the Parisian Brasserie on the Bund for lunch and dinner at the beginning of the Year of the Tiger.
Located on the sunken garden level, Grand Brasserie offers a modern, elegant, leisure dining space with finely polished marble columns and wooden furnishing. This cozy lobby presents exquisite craftsmanship and luxury.
The new Parisian semi-buffet lunch offers a selection of nine main courses, including the all-time French classics like confit duck legs that slow cooks the meat with secret spices for four hours before it’s then seared to achieve a crispy skin, delivering an excellent contrast of textures and flavors. The Gratin Dauphinois, on the other hand, is a creative spin of an ultra-creamy homemade classic that blends rich milk, cream, and cheese into the layers of potato slices. In the meantime, the roasted bone-in pork chop with juicy and smooth meat is complemented with the French-style mushroom sauce.
The semi-buffet lunch offers a fresh salad station, freshly baked bread, soups of the day, seasonal fruits, and sweet treats for guests to enjoy freely. The long open kitchen also offers a glimpse of the chefs working while enjoying a serene view of the green garden from the French windows.
The Grand Brasserie Parisian Wholesome Dinner Set tailored by the chefs will open an evening of the gourmet journey with French oysters served with champagne jelly, followed by the classic starter, French onion soup, which caramelizes the fresh onions and then incorporated in beef bone broth that has been simmered for 24 hours.
The choices for main entries include fresh whole lobster roasted in the French style, which is balanced with a sauce of lemon, garlic, and butter, whole seabass roasted with herbs and butter, and the beautifully marbled T-bone steak fired up to perfection.
The new menu is excellent for sharing with family, friends, and loved ones. For dessert, the flame souffle flavored with orange liqueur is creamy, rich with a breeze of fresh citrusy flavor.
And for Friday and Saturday, the chef will prepare platters for sharing and enjoying with wines, including French-style charcuterie and cheese (mortadella, beef pastrami, Lyoner sausages, and assorted French cheeses), and a unique seafood platter highlighting peony shrimps, octopus, caviar, king crab legs, and Boston lobster.
