One of Cancun’s newest urban hotspots, Canopy by Hilton Cancun | La Isla, is thrilled to unveil its exciting summer culinary and cocktail menus, inspired by international tastes and perfected with local and regional ingredients.
Served at Canopy Cancun La Isla’s stunning Wander Rooftop, Azulinda Café & Bar, and eclectic hub Canopy Central, these colorful, robust menus feature carefully curated flavor combinations designed to refresh and delight the palate, using local and sustainable ingredients.
This summer at Wander Rooftop, one of the city’s newest and coolest rooftop destinations, after a refreshing dip in the infinity pool, guests can enjoy a creative light snack, sharing plate, or larger dish with roots in Japanese and Italian cuisine, while relaxing at the poolside lounge. Menu highlights include a Mango and Passion Fruit Ceviche, assortment of classic and alternative sushi such as Rollo Mexicano made of beef ‘pastor style,’ cream cheese, pineapple and sambal, as well as tuna and shrimp tostaditas and more.
Chef Alejandro Lugo explains the menu inspiration, “Unknown to many, South America has many dishes with Japanese and Italian essence. For example, a popular dish in South America commonly known today as ‘tiradito,’ which is a combination of thin fish, beef, or shellfish, is actually a Peruvian version of Japanese sashimi and Italian carpaccio. For our summer menus, I’ve mixed these iconic dishes with fresh local fruits and flair from our city’s surrounding regions.”
At the buzzing all-day indoor dining restaurants, Azulinda Café & Bar and Canopy Central, the local and internationally inspired menu selection continues with a delicious mix of Mexican breakfast options, snacks, sandwiches, salads, and main dishes. Classic Cancun breakfast items include favorites like Ranch Eggs served on blue corn tortilla, Chicken Emolades served with handmade mole and finished with cotija cheese, and Chipotle Eggs Benedict with thin bacon gratin and cream. For lunch and dinner, guests can enjoy dishes like Chiltepin Shrimp Aguachile, Mexican Grilled Shawarma, a local spin on a popular Arab dish, Mayan Paella, and assortment of freshly made desserts.
Available at all dining areas are made-to-order pizzas with a twist. Executive Chef Adrián Gerbolés states, “The goal of our new summer menus is to show our guests the very best tastes and flavors our region has to offer. Made from scratch and baked in our clay ovens, we offer made-to-order personal pizzas which incorporate regional toppings and ingredients like cochinita pibil, a famous Mexican slow-roasted pork dish from the Yucatán Peninsula.” Some of these mixed cuisine pizzas and calzones include a Chori-Tuna Pizza made of Spanish chorizo, fresh tuna, burrata, arugula, tomatoes, and spicy vinegar, as well as the Caribena, featuring garlic sauce shrimp, gouda, parmesan, mozzarella, avocado, aioli, tomato and parsley.
Overlooking the Nichupté Bay and the Caribbean Sea, in the heart of Cancun’s coveted Hotel Zone, this beautifully designed urban oasis is the place to be this summer for locals and travelers alike.
