Canopy by Hilton Cancun La Isla is pleased to announce a new lineup of social events taking place at Wander Rooftop in the first quarter of 2021 alongside unveiling exciting culinary news.

From hosting new wellness and pet-friendly events to welcoming Adrián Gerbolés as the new Executive Chef of Azulinda Café & Bar and Wander Rooftop and providing new access to testing services, below is what guests can expect during an upcoming stay at one of Cancun’s newest urban sanctuaries.

Upcoming Events at Wander Rooftop

As part of its annual calendar of events, guests can look forward to exciting activations at its stunning rooftop oasis, Wander. This month, on February 20, Canopy by Hilton Cancun La Isla will host a cute, Insta-worthy “Dog Meetup” event in collaboration with travel agency HIS, Mexico Planners DMC, and Maya Mexico, a puppy apparel and accessories brand. The event will have a special local canine influencer, @murph_holbox. This show is an extension of the property’s popular Paws in the Neighborhood programming, which offers canine companions in-room water bowls, Just-Right dog beds and filtered spring water stations on every floor so pups and guests can easily refuel and hydrate.

Taking place March 4th – 8th, 2021, Canopy by Hilton Cancun La Isla will host a 5-day yoga and music wellness retreat, called Rise & Vibe. This unique retreat offers daily yoga and meditation sessions, a Saturday night dance party, and Sunday “Green Demon Beach Club” beach party inclusive of round-trip boat ride to Isla Mujeres. Presented in collaboration with Trebelemonsters, the weekend’s events will feature music from a lineup of famous international host DJ’s. Canopy by Hilton Cancun La Isla Welcomes Executive Chef Adrian Gerbolés

With more than 20 years of international culinary experience, Executive Chef Gerbolés brings passion and creativity to Canopy by Hilton Cancun La Isla, as he steps into his new role at Azulinda Café & Bar and Wander Rooftop. Believing in the importance of using local and sustainable products, Gerbolés creates a new, authentic culinary experience at the hotel.

Through his locally inspired menus, Gerbolés introduces guests to native specialties and provides opportunities to support local vendors. Whether enjoying his Mayan Paella, blending classic Paella traditions with a local Caribbean twist, or the bright flavors of his Seafood Taco Trio, guests will savor authentic cuisine and fresh flavors for a true Cancun experience.

Prior to joining Canopy by Hilton Cancun La Isla, Gerbolés was most recently Executive Chef at Hilton Mexico City and served on the pre-opening task force at Umbral, Curio Collection by Hilton. He is a graduate from multiple culinary institutions, having formally trained under programs including the Gato Dumas Institute and Le Cordon Blue – Sofitel.

Next month, Chef Gerbolés will host a livestreaming cooking class for Cancun residents, part of the Hilton series “Libera Tu Paladar” (Ease Your Palate), demonstrating a native recipe called “From the Sea and the Earth.” Guests can look forward to additional future events in the upcoming months.

COVID-19 Testing

As part of the property’s enhanced safety measures, Canopy by Hilton Cancun La Isla is available to provide booking assistance and transportation for antigen COVID-19 testing by a third-party medical vendor, just a few minutes away from the hotel. PCR tests are also available at a local hospital. Both tests are accessible at an extra cost.
