  1. Afternoon Tea Turns Pink for Breast Cancer

In support of the National Breast Cancer Foundation, The Fullerton Hotel Sydney will be offering a pink-themed Afternoon Tea served at The Bar for the month of October 2020. A  portion of proceeds from each Pink Afternoon Tea sold will be donated to the National Breast Cancer Foundation to support research towards the prevention and cure of breast cancer.

Indulge in six specially crafted pink desserts created by the Fullerton’s pastry team, including Raspberry Yuzu Delice, Lychee Yoghurt Rocher, Pink Guava Crémeux with Rose Gel, Strawberry Basil Éclair, Baked Philly Cheesecake as well as Morello Cherry Mousse with Hibiscus Jelly.

Pink hues carry throughout the savoury selection with fresh Tasmanian Salmon with Tsuyu and Ginger Flakes, Roasted Beetroot and Goat Cheese Tartlet, Salted Butter and Cucumber Sandwich, Free-range Chicken and Celery in Sesame Bun, Lobster Basket with Avruga Caviar, Classic Free-range Egg Sandwich and Braised Wagyu Short Rib, Pickles Radish and Fried Shallots.

The Pink Afternoon Tea will be served daily under the light-filled atrium at The Bar from 12.00 p.m. to 6.00 p.m. and will be priced at A$78 per person including TWG Tea, Coffee and Pink Beetroot Lattes, A$88 per person including a Sydney Sling Cocktail, and A$98 per person including a flute of Rosé R De Ruinart Champagne.

  1. Three-course Celebration Menu at The Place

The Fullerton Hotel Sydney celebrates authentic Australian flavours with a three-course Celebration Menu. Featuring fresh Australian produce, the specially crafted menu includes a refreshing Marinated Watermelon Salad, delicious Poached Blue Eyed Cod and moreish Caramelised Tonka Bean semifreddo to finish. Each dish is paired with a specially selected Australian wine to complement and elevate the dining experience.

  1. Introducing Fullerton Cakes and Signature Cookies

The Fullerton Cakes and Signature Cookies range debuts in October with a premium selection of artisanal cakes and indulgent cookies available for dine in and take away from The Bar.

The Fullerton Cakes and Signature Cookies selection comprises a range of nine speciality cakes, created and designed by Head Pastry Chef, Rohit Menon and his team. Each cake is handmade, featuring classic favourites such as the Blueberry Philly Cheesecake, and the Pandan Calamansi Chiffon Cake, which is inspired by heritage flavours from Singapore.

The Fullerton Signature Cookies are perfectly crunchy on the outside and soft on the inside. Enjoy classic flavours and well-loved favourites including the Matcha Pecan Chocolate Cookie and the Chocolate Coconut Cookie, both featuring premium Valrhona chocolate.

Prices of celebration cakes, suitable for six to eight people, start from A$90 per cake while the large Fullerton Signature Kueh Lapis Legit cake is priced at A$120 per cake. Mini single portions of the Fullerton Cakes are also available for both dine in or takeaway and are priced at A$18 per cake with Signature Cookies available for A$9 per cookie.

In collaboration with The Fullerton Hotel Sydney’s sister hotel, The Fullerton Hotel Singapore, the month of November sees the introduction of a special Afternoon Tea experience. Harking back to the heritage of both Sydney and Singapore, the classic Afternoon Tea will be transformed at both properties to showcase the “Best of Both Worlds”, featuring vibrant flavours from both cities.

The Best of Both Worlds Afternoon Tea menu utilises fresh, seasonal produce and celebrates Australia’s unique flora through a selection of Australian native ingredients intertwined with a Singaporean touch. Take your tastebuds on an electrifying gastronomic journey and enjoy items from Chicken and Lemon Myrtle Sandwiches to Pandan Lamingtons, and a Kalamansi Curd Tart with Gin and Tonic Jelly.   1. The Gin Parlour

Enjoy a range of over 120 gins from around the world, including Singaporean Tanglin Gin and Australian Four Pillars gin, at The Fullerton Hotel Sydney’s Gin Parlour at The Bar.

The Gin Parlour showcases a collection of special cocktails each month, with October placing a spotlight on Singapore’s first award-winning gin, Tanglin Gin. October’s selection includes five creative cocktails crafted by Fullerton mixology maestro Keeven Lie and his team and include the exuberant Tanglin Mandarin Chilli Drop Martini, featuring Tanglin Mandarin Chilli Gin, Limoncello Lemon Juice and Sugar Syrup, and the more classic Tanglin Barrel Gin Old Fashioned, with Tanglin Barrel Aged Gin, Angostura Bitters and Sugar. The cocktails listed in the Gin Parlour’s Cocktails of the Month menu are priced at A$26 per cocktail.

Take flight and make new gin discoveries with The Gin Parlour’s gin flight, which showcases a selection of three different gins each month. October’s selection features three Four Pillars Gins (20ml each) including a selection of mixers and gourmet garnishes, priced at A$29 per flight.

A tasting board complete with two choices of gin accompanied by a selection of mixers, gourmet garnishes and a Singapore tasting plate including Chicken Satay, Kong Bak Bao and Spring Rolls is also available for sharing, and is priced at A$59 for two people.
