Four Seasons Hotel Amman announces the appointment of Alain Regnault as the new Chef de Cuisine at La Capitale, the first real French brasserie in Jordan.

A seasoned chef with 30 years of experience in Europe and the Middle East, Chef Alain will oversee and lead the culinary operations and share his authentic French flavours and carefully curated menus with his personal favourites.

Chef Alain will continue with La Capitale’s tradition of classic French dishes with a special attention to modern flavours and style. Guests of La Capitale are invited to experience Chef Alain’s fresh, light yet traditional dishes that pay tribute to iconic French recipes and cooking techniques.

Some of the dishes include foie gras with mango chutney on brioche toast, a delicious seabass with a basil crust, and for dessert, Chef Alain’s signature soufflé with dulce ice cream.

Chef Alain began his career through several restaurants, starting in his hometown in Paris, France, then ventured to work for Michelin-star restaurants, and eventually founded and owned hospitality and food and beverage consulting companies in Europe. His most recent experience was the head chef at a modern brasserie and a popular restaurant in Doha, Qatar and Dubai, UAE.

He adds, “I am very happy to be in Jordan because I love to discover new gastronomic delights and destinations. As the Chef de Cuisine at La Capitale I am very excited to introduce our guests to my style of cooking and especially my passion for pastries and chocolate.”
